An easy summer salad that requires no cooking.

I have been in a salad state of mind for the last few weeks. I haven’t been home much to have access to my little grill and I just can’t bring myself to heat up the house with a hot stove or oven. This is why I have been making mostly no cook salads for dinner like this Seven Layer Salad I made today for dinner. This Seven Layer Salad is a salad I used to have to make when I worked in the deli of a local grocery store. This was one of the most popular recipes we sold by the pound. Typically this Seven Layer Salad is a recipe that is perfect for parties and potluck. This is because it tastes great and looks beautiful in a clear salad bowl. I modified this salad to make it a little more friendly to a two person household. This recipe makes enough for a complete meal and will leave some leftovers to take for lunch the next day.

The unusual thing about this recipe is the dressing that is made with mayo, sugar and Parmesan. When I used to make this salad at the deli it was actually made with Miracle Whip but I personally think it tastes better my way using the mayo.

It helps to make this salad about 6 to 8 hours before you are going to eat it but if you’re in a pinch you can make this salad and eat it immediately. If you have time to make this salad in the morning before work it will be perfect by the time you get home in order to eat it for dinner.

The ingredients for this recipe are pretty typical:

Ingredients

  • 1 Bag of Butter Lettuce (about 6 cups)
  • 1 C of Shredded Sharp Cheddar
  • 3 Green Onions, Sliced
  • 1.5 C of Chopped Bacon
    • Tipsy Tip ~ I buy the ready cooked bacon to make this recipe even easier to prepare. I love the packaged one from Aldi. It is the best tasting and most affordable.
  • 1 C of Frozen Peas
  • 1 C of Chopped Cauliflower ( I didn’t have any cauliflower when I made this today and it tasted just fine but I do enjoy the crunch of the Cauliflower in this recipe.
  • 1 C of Mayo
  • 1 T of Sugar
  • 3/4 C of Parmesan Cheese ( I recommend Shredded)

Some people like to add sliced hard boiled eggs to this recipe which is a great idea. I didn’t want to turn the stove on at all so I did not add these. If you want to bulk up this salad even more you can use chopped chicken as well.

You can layer this salad how you want but I will share my steps to making the Seven Layer Salad:

Steps

  1. Place your lettuce in the bottom of a bowl and add the frozen peas, this is also where you would layer the cauliflower.
    1. Tipsy Tip ~ If you are making this ahead of time as you are supposed to, the peas will thaw throughout the day. If you are making this salad to eat immediately, thaw your peas in cold water.
  2. Top your peas with your bacon. Make sure you are spreading your layers across the entire top of the salad.
  3. Next, make your dressing my adding the sugar to your mayo and whisking until well combined. Then fold in your Parmesan cheese.
  4. Take your dressing and cover the entire top of your salad with the dressing.
  5. Top the dressing with your shredded cheddar and then the green onions.
  6. Cover and place in fridge for 6 to 8 hours.
  7. When you are ready to eat, toss the salad well coating all of the components with the dressing.
  8. Serve with some black pepper and top and a little extra bacon and cheddar crumble.

Cover and let sit in the fridge for 6 to 8 hours for optimal flavor.

ThisĀ  seven layer salad is perfect for a complete meal and can also be served as a side dish to your favorite Summer grilled foods. If you would like to make this for a party, double the ingredients and layer the salad in a clear bowl so that you can see the pretty layers! Toss right before serving at the party!
