    Zesty Bean Salad

    August 6, 2019thetipsyhousewife

Without fail, Mister Tipsy texts me everyday, halfway through his work day, to ask me what we are having for dinner. Last week when he texted me and asked and I responded with my answer that we were having Zesty Bean Salad, I didn’t get the typical excited response. He hasn’t quite caught on that I have been working more meatless meals into our weekly rotation this Summer. I knew this Zesty Bean Salad would be a hard sell in theory, but I also knew once he tasted it , he would love it. I used to make a very…

    Asian Grilled Chicken Sandwich

    July 5, 2019thetipsyhousewife

I have been resurrecting a lot of classic recipes that I find in my Grandma’s cookbooks and giving them a modern day makeover. I came up with this recipe for an Asian Grilled Chicken Sandwich using a classic kitchen hack where you marinate your chicken breasts in Zesty Italian Salad Dressing. This Asian Grilled Chicken Sandwich reminds me of a play on a Vietnamese Bahn Mi Sandwich. A Bahn Mi Sandwich is a typical Vietnamese Sandwich on a French Baguette and stuffed with marinated meats, cucumbers, herbs and pickled veggies.  Last Sunday we were having Mister Tipsy’s Dad over for…

    Asian Pasta Salad

    July 2, 2019thetipsyhousewife

Asian Pasta Salad This Asian Pasta Salad is a refreshing change from the usual Summer pasta salads. Made with rotini and mini won ton dumplings, this pasta salad has unique taste and texture. The recipe calls for a poppy seed dressing, but you can also use am Asian Vinaigrette or Peanut Dressing to spice things up. Fresh veggies like, red onion, edamame, peppers and peas, add vitamins and nutrients. This will be the hit of the Summer. A New Idea This Asian Inspired Pasta Salad was in my head for a few weeks now and I spent some time sorting…

    Submarine Sandwich

    June 27, 2019thetipsyhousewife

When it comes to cooking, I have some strengths. One of my greatest strengths is my ability to make a pretty great Submarine Sandwich. It is one of the things that Mister Tipsy requests the most. Every year he goes on a guys trip to Florida and he specifically requests that I make this Submarine Sandwich for him and his friends to take on the plane.  The ingredients for this sub are simple, but they are very specific. If I substitute any of the ingredients from what I normally use, it just doesn’t taste the same. I am not…

    Tomato Pasta

    June 25, 2019thetipsyhousewife

Tomato Pasta Tomato Pasta is THE pasta of the summer. Oven roasted tomatoes and garlic, plus oregano and olive oil. This recipe is salty, sweet and served with peppery cheese. Every one will ask for this all Summer long. It is a great way to use up all the garden tomatoes. A Legendary Recipe The funny story about this Tomato Pasta is that I found the recipe in an old cookbook and decided to make it for my boyfriend at the time. The name of the cookbook now escapes me, but the recipe was so good that for years after…

    Mexican Tortilla Roll Ups

    June 4, 2019thetipsyhousewife

Summer weather has arrived in the Midwest, at least some days it actually feels like Summer. For Mister Tipsy and Me, this means beach days, and lots of time sitting on our deck. For others it means feeding their kids all day long. Summer is a great time to keep easy to grab and eat snacks and meals on hand. These Mexican Tortilla Roll Ups are just one of many easy to make, and easy to eat recipes I always have in my fridge in the Summer months. What I love about these Mexican Tortilla Roll Ups is how versatile…
