Deviled Eggs In The Instant Pot

I hard boil my eggs in my Instant Pot. I simply place the rack in the pot, pour in one cup of water, add the eggs and pressure cook on high for five minutes. I allow the steam to slowly release, and then I submerge the eggs in a bowl of ice water.  Peeling is super easy.  If you do not have an Instant Pot, buy one, and in the meantime, prepare your hard boiled eggs as you wish.

Ingredients

1 Dozen Hard Boiled Eggs

1/3 C Hellmann’s Mayonnaise (I only use Hellmann’s for this)

1/4 C of French’s Yellow Mustard (I only use French’s for this)

1/3 C Scallions, sliced thin

  • I process the eggs a unique way, I cut a very small sliver off each end, then halve the egg around the “equator” if you’re holding the egg vertically from tip to tip. This allows the egg to stand up on the dish and have a deeper spot for the filling.
  • Remove the yolks into a bowl and add the mayo and mustard.
  • I use a Kitchen Aid mixer and whip the filling for a very long time until it is a nice and fluffy.
  • I use a pastry bag to fill the eggs, but you can spoon the filling into your eggs or fill a baggie with the filling and cut a small piece of a corner off the bag and fill the eggs this way.
  • Top eggs with scallions.
