One of the things I love to do while cooking is us One of the things I love to do while cooking is use ethnic or cultural ingredients in new ways. I think this is a great way to explore other cultures and food.  My local grocery store carries this Iraqi pita bread called laffa which is what they told me at the store, but some are sharing that this is called Lebanese pita, or Lebanese bread. It is very thin and pocketless, different from other pita bread. It’s typically used in Iraqi cooking as something to wrap sandwiches in. I discovered it makes the perfect copycat wood fired pizza at home. You can find this pita lots of places in Chicago. But google Laffa or Lebanese bread to find it in your area. In a lot of stores I find it in the middle eastern section, or near the deli where they sell hummus and other pitas. 

✔️I brush it with olive oil on both sides and sprinkle it with salt and pepper and pre bake it for a few minutes. 

✔️top with marinara, fresh mozzarella, drizzle of olive oil, salt, pepper and dried Italian herbs, bake at 475° until the cheese is soft. 

✔️top with fresh basil or spinach.

The crust is super duper crispy like wood fired. Super light so you can eat a lot. Make a fun pizza night where everyone can pick their own toppings.

The other day I catered a 6 course appetizer meal The other day I catered a 6 course appetizer meal for 10 that I donated to a silent auction for a fundraiser. The theme of the meal was “Chicago Steak House” but in small bites. One of the courses was this mini, 3 bite wedge salad. It was delicious. If you want to make a mini or even full size version here’s what you need to do. 

✔️hard boil eggs, peel, then pulse a few times in a food processor with salt and pepper until they are a fine crumb.

✔️candy some thick cut bacon by spreading bacon on a cooling rack on top of a cookie sheet, sprinkle with brown sugar, cayenne pepper and black pepper and bake low at slow at 350° until the bacon is the level of crispy you prefer.

✔️get a bottle blue cheese dressing and mix in 1/2 cup of blue cheese crumble, add some black pepper. 

✔️grab a bottle of dark red french dressing.

✔️slice some green onions thinly.

✔️wash and cut some iceberg into small wedges.

I assemble the salads by adding the lettuce to a plate, a decent spoonful of the blue cheese dressing, then I add additional crumbled blue cheese, then the egg, add a couple of pieces of the bacon, then drizzle with the French, then top with green onions. Sprinkle of black pepper to finish it off. 

Delicious as a side or make a larger portion and call it a meal.

These Asian inspired meatballs are always a hit as These Asian inspired meatballs are always a hit as an appetizer, or you can serve them over rice with some sautéed vegetables for a great dinner. So very easy to make too! 

For the Meatballs

2lbs of Ground Pork
2 T of Minced Fresh Ginger
3 Cloves of Garlic, Minced
3 Green Onions, White and Green Parts, Sliced Thin
2 T of Soy Sauce
1/2 C of Crushed Roasted Peanuts
1 T of Peanut Butter
Salt and Black Pepper to taste
1 T of Onion Powder
1 T of Brown Sugar
2 Eggs

For the Glaze

1/2 C of Soy Sauce
1/4 C of Vegetable Oil
1 T of Peanut Butter
2 Green Onions, Sliced Thin

Combine all the ingredients but don’t overwork the mixture.
The steps are super simple, the key to this recipe is making sure the meatballs rest on the counter before baking them.

Steps

✔️Combine all the ingredients in a large bowl.
✔️This mixture is messy to work with so you may want to wear gloves. Mix the ingredients well until they are combined, but do not overwork the meat mixture.
✔️Use about 2 T of the meat mixture and form 2 inch size balls, you may need to add more or less meat to each ball to make them even so that they cook evenly.  The peanuts also pop out a little bit, while rolling, push them into the center of the meatball.
✔️Place each rolled meatball onto a foil lined cookie sheet. When you have them all rolled, let them rest on the cookie sheet for 30 minutes at room temperature.
✔️Heat your oven to 350 degrees and place the meatballs in to bake, this should take about 20 minutes, test one to make sure they are done before taking them out of the oven.
✔️To make your glaze add your vegetable oil and say sauce and bring to a low simmer.  Add the peanut butter and whisk until well combined and creamy.
✔️Add the meatballs to the pan and toss to coat. Top with the green onions and serve!
