These Asian inspired meatballs are always a hit as These Asian inspired meatballs are always a hit as an appetizer, or you can serve them over rice with some sautéed vegetables for a great dinner. So very easy to make too! 

For the Meatballs

2lbs of Ground Pork
2 T of Minced Fresh Ginger
3 Cloves of Garlic, Minced
3 Green Onions, White and Green Parts, Sliced Thin
2 T of Soy Sauce
1/2 C of Crushed Roasted Peanuts
1 T of Peanut Butter
Salt and Black Pepper to taste
1 T of Onion Powder
1 T of Brown Sugar
2 Eggs

For the Glaze

1/2 C of Soy Sauce
1/4 C of Vegetable Oil
1 T of Peanut Butter
2 Green Onions, Sliced Thin

Combine all the ingredients but don’t overwork the mixture.
The steps are super simple, the key to this recipe is making sure the meatballs rest on the counter before baking them.

Steps

✔️Combine all the ingredients in a large bowl.
✔️This mixture is messy to work with so you may want to wear gloves. Mix the ingredients well until they are combined, but do not overwork the meat mixture.
✔️Use about 2 T of the meat mixture and form 2 inch size balls, you may need to add more or less meat to each ball to make them even so that they cook evenly.  The peanuts also pop out a little bit, while rolling, push them into the center of the meatball.
✔️Place each rolled meatball onto a foil lined cookie sheet. When you have them all rolled, let them rest on the cookie sheet for 30 minutes at room temperature.
✔️Heat your oven to 350 degrees and place the meatballs in to bake, this should take about 20 minutes, test one to make sure they are done before taking them out of the oven.
✔️To make your glaze add your vegetable oil and say sauce and bring to a low simmer.  Add the peanut butter and whisk until well combined and creamy.
✔️Add the meatballs to the pan and toss to coat. Top with the green onions and serve!

Whenever I have Sunday dinner or a holiday Mister’s Dad calls me a “pantry drinker” cause he says I always come out of the kitchen loaded after getting all the food out. 😂😂 I used to call these Pink Margaritas but I think I want to change the name to Pantry Drinkers cause they are so ladylike and cute looking but they pack a deadly punch. Here’s what you do:

✔️fill a large wine glass to the top with crushed ice 

✔️1.5 shots of good quality clear tequila + 1 shot of Cointreau, grand marnier or triple sec, 1/2 shot of lime juice + 1/2 shot of the juice from some maraschino cherries, shake over ice and pour over the crushed ice

✔️add a bunch of thin slices of lime and or lemons, fill the glass the rest of the way with strawberry lemonade or watermelon lemonade , top with a cherry, sometimes u add mint 

Enjoy in your pantry tomorrow while waiting for that ham to warm.🌷🐇

I’ve been craving a Chinese Chicken Salad and I I’ve been craving a Chinese Chicken Salad and I was disappointed to see they took it off the menu at one of my favorite restaurants. I do have this version I make at home that is delicious! I made a video of my steps to making it and it’s on my IGTV . It’s also saved to a story highlight called CC Salad. All you need is:

Bagged Asian Salad Kit 
Soy sauce
Dried wasabi peas, found in the bulk aisle
Green onions
Dried Asian pears
Cooked chicken strips
Garlic 
Honey roasted peanuts

So delicious and easy to make and it’s hearty enough to be a complete meal.

If you are looking for an easy make ahead breakfas If you are looking for an easy make ahead breakfast or brunch for Easter Sunday my overnight french toast casserole is perfection. I use my bread dumplings because they can soak overnight or even up to two nights before baking and they don’t fall apart. 

Ingredients 

2 Boxes of Chateau Bread Dumplings
6 Eggs
2 Cups of Whole Milk
1 C of Heavy Cream
1/3 C of Light Brown Sugar + 2 Tablespoons
1/2 t of Vanilla Extract + another 1/2 t
1/4 t of Almond Extract
1 teaspoon of Cinnamon
A couple of shakes of nutmeg
1/2 t of salt
1 Stick of Butter
Maple Syrup & Powdered Sugar

Steps

✔️Thaw and cube your bread dumpling, we like to cut them into small bite sized cubes so that it is kid friendly.
✔️Whisk together the milk, cream, eggs, salt, nutmeg, cinnamon, 1/3 C of brown sugar, vanilla and almond extract until well combined.
✔️Melt 2 T of butter and pour into a 9 x 13 casserole dish.
✔️Add your cubed dumplings to the dish and pour the batter over it. Give it a few tosses to make sure all the dumplings are soaking in the batter.
✔️Cover and into the fridge overnight and up to two nights.
✔️When ready to bake, remove from the fridge, melt the remaining stick of butter and the 2 T of brown sugar and pour over the top of the casserole, drizzling it as you go.
✔️Bake at 375 degrees for about 45 minutes. You will know when its done when the casserole is firm in the center.
✔️When you remove it from the oven, drizzle it with syrup and sprinkle it with brown sugar, then let it rest for 10 minutes.
✔️Serve by scooping it out like bread pudding.
✔️Serve with syrup powdered sugar, fresh fruit or whipped cream.

I also sometimes make a cinnamon roll icing for the top by mixing a cup of powdered sugar with two tablespoons of melted butter and a splash of heavy cream, then some cinnamon. Mix together then pour over the hot casserole.
