I love making this Spaghetti and Meatballs recipe I love making this Spaghetti and Meatballs recipe on a Monday. It’s like a Sunday Sauce but one that is made in under an hour. The special trick is to make “drop meatballs” instead of taking up tons of time rolling every meatball. See my story highlight “Monday Meatballs” for the easy step by step to this recipe. Here’s what you’ll need:

1.5 lbs of lean ground beef
3/4 c powder Parmesan + more for serving 
1 medium yellow onion diced
4 to 6 cloves of garlic, chopped
1 medium green pepper diced
2 eggs 
1 tablespoon of gravy master or soy sauce
2 eggs 
1 28 ounce can of tomato sauce 
1 small can of tomato paste with roast garlic
Dried oregano 
Onion and Garlic Powder
Salt & Pepper
Olive Oil

✔️in a deep sided skillet sauté your onions, garlic and peppers in some olive oil until soft
✔️mix your ground beef, parm, eggs, gravy master or soy sauce, and your herbs and seasonings. I don’t measure the seasonings, use as much or as little as you prefer. Don’t over mix the meat, just make sure it’s well combined
✔️in your pan with the veggies, make a little room by pushing the veggies to the sides and using a scooper or a spoon, drop about two inch portions of the “meatballs” into the pan. Don’t worry if they aren’t round or fall apart some
✔️let them crisp up a little, then using a wooden spoon, stir them around a bit so they get a little brown on all sides, you will have bug chunks and small chunks; they will fall apart don’t worry
✔️add your tomato sauce and paste, and fill the sauce can with water and add that, I usually add more of the seasonings and herbs
✔️stir well, bring to a simmer and simmer for 30 minutes 
✔️boil your spaghetti , drain and rinse with hot water, drain again
✔️I like this sauce less and thick so I serve after 30 minutes, if you like it thicker let it simmer longer, it also thickens after 15 minutes off the heat

Serve this sauce and meatballs with bread and a nice salad. You will love this sauce because you will have delicious bits of meat and a fragrant delicious sauce that tastes like it cooked all day. It freezes well and is also a great meal to bring to a friend in need.

Yesterday we had an unexpected snowstorm that dump Yesterday we had an unexpected snowstorm that dumped over a foot of snow on us in about 4 hours time. I watched in awe at natures wonder. The day before we had bare ground in lots of spots from a few warm days in a row and today everything was buried again. We loved it!

The dogs and I were outside for hours yesterday enjoying the snow falling, playing, and walking in the snow. Where we live is deep in the national forest in the upper peninsula of Michigan, it was Sunday and no plows were coming to plow the forest road until Monday which is slightly scary but also made me feel so cozy being snowed in. The dogs and I went on a long walk at sunset, before dinner and were treated to these candy colored skies. This is truly paradise. 🌲🤍

Something about a good Sunday dinner that makes th Something about a good Sunday dinner that makes the week ahead more bearable. One of my favorite Sunday dinners to make for Mister and I are these simple baked chicken breasts and my famous stuffing recipe. I’ll link the stuffing recipe in my stories or you can find it by clicking the blue link in my profile and searching World’s Best Stuffing. I’ll sure below my tips for cooking the best chicken breasts you ever had!

✔️4 Boneless, Skinless Chicken Breasts, if they are very thick, split them.
✔️1/3 C of Kosher Salt
✔️8 C of Luke Warm Water
✔️1 Stick of Butter
✔️Salt, Pepper, Garlic Powder & Paprika to taste

•Place your chicken breasts in a large bowl and cover with 8 C of Luke Warm water,!the breasts need to be submerged.
•Stir into the bow the 1/3 C of the Kosher Salt.
•Pre-heat your oven to 400 to 425 degrees depending on how hot your oven gets.
•Let your chicken breasts sit on the counter for 15 to 20 minutes in the salt water.
•Drain your chicken breasts and pat them dry with paper towels. Make sure to rinse your sink well with very hot water and even give it a spray of bleach so there is no cross contamination and you don’t get sick.
•Cover a cookie sheet with foil and place the chicken on the sheet and brush the chicken really well with the butter.
•Pour the remaining butter over the chicken, or discard the rest, to avoid cross contamination do not use the butter for anything else.
•Season the breasts well with the salt, pepper, garlic powder and paprika.
•Make sure your oven is very hot, this is key. 
•Place your chicken in the oven for 15 to 20 minutes. Every oven is different. You should remove your chicken from the oven when it reaches a temp of about 150 to 160, it will continue to cook 5 to 10 degrees out of the oven. This helps the chicken from getting dry.
•This last step is the most important. Let the chicken rest for 20 minutes minimum. This allows the juices to redistribute before slicing it.

I serve these with my stuffing, a veggie and I make a couple packets of chicken gravy. So simple and so delicious.

I’m OBSESSED with this soup! This is an old scho I’m OBSESSED with this soup! This is an old school Czech recipe. You will love it! If you cook for kids they will gobble this up!

Frankfurter & Potato Goulash

1 box of bread dumplings
1 stick of butter
1 packgae of good quality hot dogs (6 to 8 links)
4 medium sized russet potatoes
1 medium yellow onion
1 tablespoon of tomato paste
1/4 cup heavy cream
chicken or beef bouillion and about 8 cups of water or 8 cups of chicken or beef broth
Paprika, I used 1 Tablespoon of sweet and 1 Tablespoon of Smoked spicy, you should adjust this to your taste preference
Salt, Pepper, Garlic Powder or Onion Powder
Marjoram or Oregano to taste (this is a strong spice so season and adjust)

✔️In a deep sided skillet or soup pot add 3 tablespoons of butter and then finely dice your onions and add to the skillet, cook low and slow until golden brown. Add your tomato paste and saute for a minute or two.

✔️Slice your hot dogs and add to the onions and saute until they are slightly caramelized.

✔️Dice your potatoes very small and add to the skillet, then add all of your dry seasonings, use the paprika and marjorma or oregano sparingly at this point, you can add more after the goulash has cooked. Let the potatoes cook for 15 minutes, then add your bouillion, water or broth. The mixture should be covered by about 1/2 inch.

✔️Bring to a boil reduce to simmer, put the lid on the pot slightly askew so steam can escape. Simmer for 40 minutes.

✔️At the 40 minute mark, I use a potato masher to bread up the potatoes a bit, this isn't a required step. Stir in your heavy cream and simmer for 5 minutes. Remove from heat and let the goulash rest for a few minutes. Taste and adjust the seaonings.

✔️Toast your bread dumplings in a toaster and then butter, add your goulash to a bowl and place one bread dumpling in each bowl to soak up that delcious broth.

I was always taught that when you don’t know wha I was always taught that when you don’t know what to do for someone who is going through a tough time, bring them a meal, so that’s what I do. I try to pick things to bring that aren’t in overwhelming amounts, that are easy to prepare and also can be frozen. Yesterday I made my Sloppy Joe’s for some friends. The recipe is so simple. You can halve this recipe but this amount was perfect to bring them food with freeze able leftovers and a meal for us. 

3lbs ground beef
2 small yellow onions diced
1 large green pepper diced
2.5 cups (about) ketchup
2 tablespoons of gravy master
1 tablespoon of soy sauce 
2 teaspoons of Chinese five spice 
2 teaspoons of chili powder
2 teaspoons of cayenne pepper 
Salt and Pepper
2 tablespoons of bread and butter pickle juice
1/4 cup minced bread and butter pickles

• brown your onions and peppers in some oil or butter, add your ground beef and brown, then drain if needed
• season with all your dried spices then add your liquids, simmer for 15 minutes 
• stir in your minced bread and butter pickles, you can add more if you want

These kinds of meals are perfect for someone who has just had a new baby, dealing with an illness, or has just experienced a death. This is easy to heat up any time of day or night and is a nostalgic comfort food.
