Meatball Salad

Meatball Recipe

1lb Ground Meat, I Use Beef

1 Egg

1 Cup Parmesan Cheese (the powdery kind)

1 Sleeve of Ritz Crackers, Crushed Up Fine

Salt & Pepper

1 Medium Onion, Minced

1/2 C Fresh Parsley Minced

Garlic Powder, I like A lot

  • Mix all ingredients together in a large bowl.
  • Form into balls, size is your preference.
  • Let them sit out on a cookie sheet for about 30 minutes.
  • Bake in oven at 350, degrees for 30 minutes, or brown in a skillet and place in sauce to simmer for one hour, or toss into your all day sauce to cook for 3 hours.

For the Salad I use any combination of my favorite salad toppings. For this one I used romaine, fresh mozzarella, sun dried tomato, peppers, ditalini pasta and an Italian style dressing.

This is a delicious low carb and can be modified to no carb dinner or lunch option.
