Seasonal Fruit Salad with Mint Vinaigrette

I had purchased a bunch of fruits from a local grocery store and they didn’t have a super lengthy shelf life.  I know for sure that while the kids will not always eat intact fruit, they will always eat fruit salad. For some reason they love things cut up small.  Stone fruit is in season right now and the plums, peaches, and apricots taste like heaven. I found a variety of plums called Very Cherry Plums. The flavor of these little bite sized gems is pure heaven. A perfect balance between sweet and sour.

I knew I wanted their flavor to stand out in this fruit salad so I paired them with apricots, blueberries and fresh garden grown spearmint. A sweet vinaigrette completes this delicious salad. The recipe can be made in about 10 minutes and this whole salad that would easily feed 6, cost about $10 to make. Here is how you make it:

  • 4 Apricots, diced
  • 1 pint of Blueberries
  • 8 Very Cherry Plums (or any plums you find) diced
  • 1/3 C of Rice Wine Vinegar
  • 2 T of Honey
  • 10 to 15 fresh spearmint leaves (you can also use mint)

Simply toss the fruit together, whisk the rice wine vinegar with the honey, rub the mint leaves between your thumb and forefinger to release the oils and add to the vinegar honey. Then, toss with the salad.

You will find this salad to be so light and refreshing. The leftovers can be used for smoothies!
