Strawberry Shortcake Iced Latte

This Iced Strawberry Shortcake Latte is a creamy blend of strawberry syrup, milk, and espresso poured over ice. It’s sweet, smooth, and finished with a swirl of whipped cream and crushed shortbread graham crackers for that bakery-treat finish that’s a perfect pick-me-up any time of day.

I first discovered the Strawberry Shortcake Latte at Disney’s Fort Wilderness Resort and it instantly became my little vacation obsession. Every morning I’d hop on the golf cart and cruise over to Trail’s End Restaurant just to get one.

I liked it cause it was that perfect mix of coffee, cream, and strawberry. It literally was happiness in a cup.

When I got home I couldn’t stop thinking about it, so I decided to recreate it in my own kitchen. Now every time I make one, it feels like a tiny trip back to Fort Wilderness, minus my golf cart.

The Syrups

I like to use the Torani brand Strawberry Syrup and Vanilla Syrup for this latte. I usually grab them on Amazon because it’s easy, but you can also order directly from their website or find them at some grocery stores.

Every once in a while, I even spot them at TJ Maxx (you know, right next to the fancy olive oils and random candles you didn’t plan to buy). Wherever you find them, they’re worth keeping on hand for coffee drinks, mocktails, and desserts.

Instant Espresso Hacks

I like to use Medaglia d’Oro instant espresso when I make my iced coffees. I like it because it’s rich and smooth and dissolves perfectly without any bitter aftertaste.

It’s a great espresso to keep on hand if you don’t have an espresso machine, and it works beautifully in baking too. A little spoonful adds depth to chocolate desserts and, believe it or not, a pinch in your chili brings out incredible savory flavor.

It’s one of those pantry staples that makes everything better and will have people asking “what’s in this?”

Strawberry Shortcake Iced Latte Recipe

Strawberry Shortcake Iced Latte

A copycat version of the strawberry shortcake latte they serve at Disney's Fort Wilderness Resort. Shaken espresso with vanilla and a creamy strawberry cold foam. This is the grown up version of Strawberry milk.

Ingredients

  • 2 shots of espresso *I use a Nespresso machine but you can also use instant espresso or coffee, I will link one I use in the post before the recipe card
  • 1 tablespoon of vanilla syrup *I will post one in the post before the recipe card
  • 1 to 1 1/2 tablespoons of strawberry syrup *I will post one in the post before the recipe card
  • 3 tablespoons of heavy whipping cream
  • 2 tablespoons of cold milk, 2%
  • 1 to 1 1/2 cups of ice
  • whipped cream *optional
  • 4 top 6 freeze dried strawberries *optional
  • 1/2 of a graham cracker crushed *optional

Instructions

  1. Brew the espresso. Pour over the tablespoon of vanilla syrup. If you are using the instant espresso as I do, use one tablespoon with just a little less than 1/4 cup of water.
  2. Add 1/4 cup of ice to a shaker, I use a canning jar. Add the remaining ice to the cup you will drink out of.
  3. Pour the vanilla espresso over the ice, cover, and shake well.
  4. Add the heavy cream, milk, and strawberry syrup to a cup or jar and use an immersion blender (*linked in the Amazon store in the post) or a frother until it is slightly thicker but still pour-able. You can also whisk this vigorously in a bowl with a hand whisk. This will take a little extra time but it is worth it.
  5. Strain the shaken espresso over the ice in your drinking glass. Pour the cold foam on top. If you like you can add whipped cream to the top, the graham cracker crumbles, and the freeze dried strawberries.
