Cheeseburger Spring Roll Squares
A Disney Delight

These Cheeseburger Spring Roll Squares are inspired by the famous spring roll cart in Adventureland at Magic Kingdom, a Disney fan favorite. It’s all the flavors of a cheeseburger baked into little phyllo dough squares that are crispy yet light and fluffy.
Much to my own surprise, I have become a Disney Adult later in life. My Disney fascination is with the way the parks operate, the customer service, and, of course, the food.
My joy comes from exploring the parks and each land in Magic Kingdom thoroughly. I am always inspired by so many of the snacks and meals I have tasted at the parks so I recreate some of them at home.

My Favorite Magic Kingdom Snack
These Cheeseburger Spring Roll Squares are almost an exact replica of the Cheeseburger Spring Rolls sold at a snack cart in Adventureland in Disney’s Magic Kingdom. They are an iconic snack that many people love.
The rolls are slightly lighter than your typical wonton wrapper-type dough, which is why my recipe uses Phyllo dough to match the flakiness of the ones at Disney.
I also made mine in square form, as a time saver for when you make them. It is much easier than rolling and frying.
Disney gives you a Thousand Island type sauce for dipping. You can easily do the same on the side for dipping these squares.




Disney Inspired
One of my favorite, if not my ABSOLUTE favorite lands at Magic Kingdom for me is Adventureland. I love the plants, the snacks, and the magic behind this land.
I am also learning all about Disney’s Society of Explorers and Adventurers.
Adventureland is filled with secret “Easter Eggs” that I love looking for. Easter Eggs are little hints at all the background stories that make up the themes of all the parks and movies,



The Society of Explorers and Adventurers is a fictional organization created by Walt Disney Imagineering that exists in Disney parks around the world.
The S.E.A. is made up of members such as scientists, researchers, artists, explorers, and adventurers and their characters are often linked to popular Disney franchises like Indiana Jones and Jungle Cruise. The S.E.A.’s storylines are usually set in the early to mid-20th century and are guided by the concepts of adventure, romance, discovery, and innovation.
A couple examples of rides at Magic Kingdom that are part of Disney S.E.A. are Jungle Cruise and Big Thunder Mountain Railroad. The snacks around Adventureland are also tropical and unique compared to other snacks in the park.
I look forward to recreating MORE of these snacks and dishes from Adventureland that I love.
My Day Starts In Adventureland
I think Adventureland is the best place to start your day at Magic Kingdom. I get my Cheeseburger Spring Rolls first, then my I Lava You Float from Sunshine Tree Terrace.
I always mobile order my float so that I don’t have to wait in line.


After I grab my float I head over to the Tikki Room to enjoy some air conditioning and then I take a lightning lane for Jungle Cruise. Afterwards I finish out my time by making a second lightening lane for Pirates of the Caribbean.
It is the most perfect way to start your day in Magic Kingdom.



Adventureland has a Jungle Cruise themed restaurant that is one of my favorites. They have many “exotic” dishes.
Exotic in this case seems to mean they have an Asian inspired theme. I ate here on my birthday and enjoyed exploring the hidden secret “Easter Eggs” in the restaurant.
I also love the Pad Thai inspired noodles I had for lunch.

Cheeseburger Spring Roll Squares and Phyllo Dough
Because I love the spring rolls at Disney so much, I just HAD to make them at home. I taste tested enough at the parks that I think I got the recipe exactly right.
The Phyllo dough is definitely the key to making these taste like Disney.
Phyllo dough is usually sold in the frozen food section of your grocery store. Every time I buy it, it comes in a long narrow box.
The dough needs to be thawed to work with so you can leave it overnight in your fridge or leave it on the counter for a couple hours before making the Spring Roll Squares.

Phyllo Is Nothing To be Scared Of
Now I have always been intimidated by Phyllo dough but this recipe makes it so easy.
Even if it tears, you are fine. You just want to make sure to layer it the way I describe in the recipe card as well as coat it well with oil so that it crisps up.

Like You Are Wrapping A Present
As you can see in the picture above, you want to have the phyllo layered, and hanging over the edges of the pan. This way you can bring the sheets back over the top when you add the meat mixture so that you create layers of the flaky crust.







Feel free to use whatever dips you’d like with this dish. I won’t tell the Big Mouse!
Cheeseburger Spring Roll Squares Recipe

Bring a Disney World favorite home in a brand new, delicious form! These take a few extra steps but are worth it and can also be made ahead of time and reheated for convenience.
Ingredients
- 1 package (18 count) of Phyllo Dough Sheets (13 x 17 inch sheets)
- 2.5 lbs. of Ground Beef, 90% lean
- 1/4 cup of Dill Relish
- 1 large Yellow Onion, minced
- 16 ounces of Velveeta Cheese, cubed
- 1 tablespoon of Garlic Powder
- 1 tablespoon of Onion Powder
- 1/2 teaspoon of Black Pepper
- Sprinkle of Celery Salt
- 1 tablespoon of Mustard of your choice
- 1 teaspoon of Worcestershire Powder or 1 tablespoon of liquid Worcestershire Sauce
- 1 cup of Olive Oil, approximately
- 2 Eggs, whisked
Instructions
- Take your phyllo dough sheets out of the freezer and let it thaw on the counter for an hour or so.
- When the phyllo dough sheets are thawed, unroll them carefully and set them aside.
- In a skillet, add a little of the olive oil and add your minced onions and sauté until they are golden brown and soft.
- Then add your ground beef and cook fully, breaking the meat up into a fine crumble as it cooks. I sometimes drain the beef after cooking if it has lot of liquid or grease.
- When the beef is cooked, add your garlic and onion powders, celery salt, and black pepper and your mustard, Worcestershire and relish, turn heat on low and combine all this into the meat and cook for a few minutes.
- Cube your Velveeta cheese into small cubes and add to the meat mixture and keep on the heat, stirring occasionally until all the cheese is melted.
- Remove meat mixture from the heat and let it cool for about 20 minutes.
- Whisk your eggs and add to the meat mixture when it is cooled.
- The phyllo dough part may seem intimidating, but it is not. There are also pictures in the post to guide you. Get a baking sheet with edges and add three sheets of phyllo dough to the bottom of the sheet pan. Brush each sheet with olive oil lightly. It is ok if the sheets tear a little, just piece meal them back together.
- Next take three sheets and drape them from the middle of the pan outward so that half the sheets are outside the pan (pictured in post). You will do this on all four sides of the pan. This is so you can add the meat mixture to the pan then bring the rest of the dough sheets to drape over it. (Pictured in post)
- When you are finished draping your phyllo dough sheets, add your meat mixture to the pan and spread it out evenly. Then you want to pull each side of the sheet over the top, like you are wrapping a present. Make sure you brush all the sheets generously with olive oil in between each layer. They can look kind of soaked with the oil. Repeat this step with all four sides of the phyllo sheets. (pictured in post)
- With the remaining three sheets of dough you have left, sort of crumple them on the the top of the pan and rub/brush them generously with oil. (pictured in post)
- You then want to take a sharp knife and cut almost all the way through the pan to make squares. You can cut the squares as big or small as you like. This makes it easier to cut them after they are baked.
- Heat your oven to 375 degrees and bake for about 35 minutes. Every oven is different so keep an eye on these. They are done when the dough is golden brown.
- Take this from the oven and let it rest for about 20 minutes on top of the warm stove. Do not cover, they will get soggy.
- Cut and serve or you can refrigerate and reheat for the next day. Put in a cold oven and turn oven on to 375 and let them warm up as the oven heats, or you can heat in an air fryer or toaster oven.

What is the purpose of the eggs added to the cooled meat mixture? Just curious. I am definitely making these!

Thatés how the filling sets up inside instead of running out when it gets hot.
