An Easy Recipe for Pickle Lovers

My name is The Tipsy Housewife, and I am a pickle addict. I had the vision for these Pickle Pinwheels for a very long time, and now Iém sharing them with you. 

People are always asking me about easy recipes for their school kids. While I donét have any human children of my own, I have looked after and cooked after enough of them to feel comfortable saying this recipe is a great option for any child who loves pickles.

And ALL children love pickles. If your child does not like pickles, immediately confront them because they are secretly a fully grown adult pretending to be a child to get free food and love from you!

Kidding! Please donét send me angry messages about how your kid is hiding in their room because you yelled at them and accused them of being a secret adult.

Pick Your Pickles

I used dill pickles for this recipe, but you have a lot of options. If youére planning to serve these to kids or less adventurous eaters, dill is probably going to be your best bet.

If youére looking to make these pinwheels for a crowd with more exquisite tastes, however, you can really go wild. 

Pickle slices, crunchy onions, diced red onions, and cream cheese spread over an open tortilla on a plate.

Horseradish pickles, wasabi pickles, and other spicy varieties offer a great kick thatés still smoothed over by the mayonnaise. If you want a sweeter approach, you can use bread and butter pickles.

Got a pickle skeptic? You can use half sour pickles for a much more subtle tang.

You can even use a wide range of pickles and offer a pinwheel tasting menu!

Mix in Meats

This is a vegetarian recipe, but you can easily roll in some deli meats if you choose. Whether ités salami, bologna, turkey, liverwurst, or even…dare I say it… pastrami, it can potentially turn a snack or appetizer into a full meal.

Not that it isnét great as is, of course, or else I wouldnét have created it this way! Thereés nothing wrong with letting the pickles have their time to shine.

Brown Bag It

This is a perfectly easy lunch for school aged pickle lovers. You can make a big batch at the start of the week and keep them in the fridge, cutting up a new roll each day.

It also works well for after school, if you want something to tide your star students over until dinner.

The Full, Printable Recipe

These pinwheels are perfect for a party or for a picnic. Ités relatively little work for a lot of flavor.

Pickle Pinwheels Recipe

Chopped pickles, meats, and spread in a sliced wrap held above a plate of other pickle pinwheels.

These pickle pinwheels are a perfect snack for any pickle addict.

Ingredients

  • 3 C. of Pickles, Sliced Thin. I used Dill
  • 1 Brick of Cream Cheese, Room Temperature
  • 2 T. of Mayo
  • 2 T. of Dry Dill
  • 2 T. of Pickle Juice
  • 1 Medium Purple Onion, Diced
  • 1 C. Crushed French Fried Onions
  • 6 Large Burrito Size Tortillas

Instructions

  1. Place cream cheese, mayo, and pickle juice in a bowl and use a hand mixer to whip the cream cheese mixture until it is light and fluffy.
  2. Mix in 1 T. of the Dried Dill.
  3. Take your tortillas and spread the cream cheese mixture over the entire tortilla making sure you get it to the edges.
  4. Spread the pickles across the tortilla, leaving about an inch empty around the edges.
  5. Sprinkle purple onions over the pickles and then a few small pinches of the crispy onion and a sprinkle of dill.
  6. Start from one end and roll the tortillas up tightly. Use the cream cheese to seal the tortilla closed.
  7. This next step is important! Wrap each tortilla VERY tightly in plastic wrap. Refrigerate 4 hours or overnight.
  8. Remove tortillas from the fridge and slice one to two inches on a diagonal.
  9. Arrange on a plate and sprinkle with dill and garnish with pickle.
