Easy Potato Elegance

These Fancy Crockpot Potatoes with two kinds of onion topping make a great weeknight meal when you want something easy and vegetarian. They look like a dish youéd get at an upscale brunch place to make your Instagram friends jealous but theyére so simple to cook. 

I have made it my mission to create easy but delicious Sunday morning meals and this is one that hits both notes. All it takes is dumping some ingredients in a crockpot, forgetting about it for a while, and then remembering about it at the right time.

Low and Slow Wins the Race

This dish is so simple, you barely even need a kitchen to make it! All you need is a slow cooker and a spoon.

You donét even really need a slow cooker, to be honest, but then you will need a kitchen. While the instructions on the recipe card are for a slow cooker or crockpot, you can also bake the mixture in a casserole dish at 350 degrees for one hour.

Either way you wonét have to put in much effort. Honestly, youére probably putting more work into reading this sentence right now than youéll have to put into the recipe.

Cream of the Crop

This is quite the creamy dish, featuring both heavy cream and cream of celery soup. Ités definitely a bit decadent but letés face it, ités a potato casserole, not a power bar.

If you want a power bar, you can follow this recipe instead:

  1. Purchase one power bar.
  2. Unwrap the power bar.

There you go! 

Meat can be Neat

As presented this dish is vegetarian, but ités substantial enough that you can enjoy it as a meal or a side. You can add sliced or crumbled sausage to make it meaty. 

Crispy bacon crumbles would also be great for the top!

Hash it Out

Be sure when you get your frozen hash browns that theyére the shredded kind. I know that some people say “hash browns” when they mean something more like potato pancakes, but thatés not what I mean here!

Even if you do have those hash browns I suppose you could let them defrost a little and then shred them but itéll just be easier to buy them shredded in the first place.

This dish makes a hearty Thanksgiving morning breakfast and a side dish for your favorite protein. We gobble these up!

Fancy Crockpot Potatoes Recipe

These Crockpot Potatoes seem fancy but couldn't be easier to make.

Ingredients

  • 1 thirty oz. bag of Frozen Hash Browns
  • 2 cans of Cream of Celery Soup
  • 2 C. shredded Sharp Cheddar Cheese
  • 2 C. French Fried Onions
  • 4 Green Onions, sliced thin
  • 1 envelope of Ranch Dressing Mix
  • 1 packet of Onion Soup Mix
  • 1 C. Heavy Whipping Cream
  • Black Pepper to taste

Instructions

  1. Set your slow cooker to high for 6 hours. If you want to make these while away, you can cook on low for 8 hours instead.
  2. Spray the inside of your slow cooker with non-stick spray. Add your frozen hash browns and mix in the onion soup mix, ranch dressing, the two cans of soup, the black pepper, and the heavy whipping cream. Stir well, cover, and cook for 5 hours.
  3. At the 5 hour mark, uncover and cover the top of the potatoes with one cup of the cheese. Mix until it is well combined, then top with the rest of the cheddar cheese, most of the crispy onions, and most of the green onions. Cover and let cook for one more hour.
  4. When cooking has finished, let sit for 20 minutes uncovered. You can then serve in squares and garnish with some crispy onion and green onion.
