Hasselback Brats with mustard over mashed potatoes.

Weére well into Football season and that can only mean one thing: these Hasselback Brats with Honey Mustard. Get ready for your new go-to fall grilling meal.

This recipe came to me on a whim and it was absolutely delicious. I had some brats in the freezer and there were some sweet and russet potatoes in my Imperfect Produce order that I needed to do something with.

I was in a rush one day to come up with a dinner plan and the idea for these Hasselback Brats With Honey Mustard came to me. I chose to slice the brats Hasselback style for two reasons.

An overhead view of a Hasselback Brat in between two kinds of mashed potatoes with green parsley on a gray plate.

One is so that they would grill up faster and the other is so the honey mustard glaze would flavor the brats better. Like most of my recipes, this is an easy one that takes very few ingredients and very little time to prepare.

There is a printable recipe card at the end of the post with all of the ingredients and instructions. You can hit the print button to bring the recipe up on one screen without ads and you can either print it or screenshot it from there.

Cause I Ainét No Hasselback Girl

So for anyone who might not know what “Hasselback” is, it refers to the cooking technique of cutting partial slits along the food youére preparing. Traditionally it is used for potatoes, but Iéve applied it to Pork Tenderloin and now brats as well.

Raw brats with partial, diagonal cuts along their length.

Apparently this style of preparation originated at the Hasselbacken Restaurant in Stockholm, Sweden. I appreciate their innovation as it helps spread the flavoring all around and within.

Hopefully they appreciate my innovation of applying their innovation to other foods. Weére like a legendary culinary team and Iém sure theyéd agree.

Two Potato Treat

Whatés the only thing better than one kind of mashed potatoes? Thatés right, a brand new car!

But also two kinds of mashed potatoes. Iém sure some people would rather just make one big mash, but I think this dish is best when you can appreciate the specific tastes of the russets and the sweet potatoes separately.

If you want, you can even try taking a bite of brat with regular potato, a bite with sweet potato, and then one where you mix them all together to see what you prefer.

To Bun or not to Bun

While this recipe is designed to be served over potatoes, you can also enjoy it on a bun like you would a sausage sandwich. This could be a good choice if youére looking for an easy delicious meal to eat while watching football.

I can only tell you how to make these amazing brats. What you do with that information is up to you!

This will be your new favorite fall grilling recipe. Perfect for football season.

Ingredients

  • 6 Brats, cut partial diagonal slits along each one
  • 2 Russet Potatoes
  • 2 Sweet Potatoes
  • 1 stick of Butter
  • 1 C. Milk
  • 1/2 C. Yellow Mustard
  • 1/4 C. Honey
  • 1 T. Dried Parsley
  • 1 tsp. Paprika
  • 1 tsp. Garlic Powder
  • 1 tsp. Chili Powder
  • 1 tsp. Black Pepper

Instructions

  1. Peel and chop the sweet potatoes and russet potatoes. Bring them each to a boil in salted water in two separate pots.
  2. In a bowl, combine the mustard, honey, parsley, paprika, chili powder, garlic powder, and black pepper. Set that aside.
  3. Heat your grill or grill pan and begin cooking your brats, turning occasionally.
  4. When the brats are cooked, reduce the heat to low and begin basting the brats with your honey mustard mixture, turning occasionally to baste on all sides.
  5. Meanwhile when your potatoes are soft, drain and mash them separately using half the milk and butter in each. You can add salt and pepper to taste.
  6. Remove your brats from the grill and plate this dish by placing the russet mashed potatoes and mashed sweet potatoes side by side. Top with a brat and drizzle some of the honey mustard across the entire dish. I also added a sprinkle of chili powder and parsley to the top of mine.

This dish is a great way to make something simple and affordable into an elegant and delicious dish. It is comfort food at its finest. It is perfect for a fall dinner for a busy weeknight and special enough for a Sunday dinner. I hope you enjoy!
