This Dill Pickle Soup does not taste how you would expect it to. Ités creamy, hearty, and delicious.Â
I modified this recipe from hundreds that are on the internet to create the perfect version in tribute to my Polish heritage. Ités great for lunch or dinner. and ités pretty easy to make and it keeps well in the freezer.

Magical Pickle Potion
Pickle juice is rich in antioxidants and is thought to keep your blood sugar in check. Ités good for your gut and it will help your muscles after a workout.
In addition to various other health benefits, it also works great as a chaser for whiskey. Ités called a pickle back and if you drink and like whiskey you owe it to yourself to try it at least once with whatever pickle juice you have left over.
The whiskey might undo some of the health benefits, but the soup also has sour cream so ités not exactly cold pressed juice in the first place.

If youére really feeling wild you can have a full pickle party with the soup, pickle backs, fried pickles, and either my Pickle Fried Chicken Sandwiches or Pickle Pot Roast Sandwiches.
Itéll be a good chance to find out which of your friends are true believers and who is just a pickle pretender.
Seasonings are Suggestions
As with many of my recipes, the seasoning measurements in the recipe card are meant as suggestions.
I know that some ingredients, like mustard powder, can be strong for some people so feel free to use less if youére not a fan.
For all of the spices I would recommend tasting as you go and adjusting accordingly.

Dill Delivers
I highly recommend you use dill pickle juice, as outlined, the first time you make this recipe. If you want to try experimenting in the future with different types of pickle juice, however, that could be fun.
You could try going more sour or even try a spicy pickle juice. It could be a nice kick of heat on a cold day, though the sour cream will probably do a good job of smoothing it out if you donét want it to be too spicy.
Dill Pickle Soup Recipe

Dill pickle soup is a tasty Polish recipe that may surprise you if you're pickle skeptical.
Ingredients
- 2 C. chopped Dill Pickles
- 1 Yellow Onion, diced
- 1 C. Celery, diced
- 1 C. Carrots, diced
- 3 Idaho Potatoes, peeled and diced
- 2 T. Butter
- 6 C. Chicken Stock or Broth
- 4 T. fresh Dill, minced, or 2 T. dried
- 1 C. Sour Cream
- 2 C. Dill Pickle Juice
- 2 T. Flour
- 1/2 C. Hot Water
- Salt
- Pepper
- 1 T. Dry Mustard
- Nutmeg
- Cayenne
- Cinnamon
- Ground ginger
- All spice
- 3 Fresh Bay Leaves (must be fresh)
Instructions
- In a large stock pot, sauté onions, carrots, and celery in butter until soft.
- Add the chicken broth, potatoes, and pickles. Bring to a boil, reduce to simmer, and add the pickle juice, the dill and bay, and all the dried seasonings.
- Simmer for 45 minutes.
- In a bowl, add the flour and hot water and whisk until it’s a smooth paste then whisk in the sour cream.
- Lower heat on the soup to low.
- Remove the three bay leaves.
- Add in the sour cream and flour mix a little at a time, running an immersion blender as you do. This makes the soup creamy with no chunks and the flour mixture doesn’t get floppy. If you like chunks or don’t have an immersion blender you can use a whisk but make sure you whisk rapidly while adding the sour cream mixture.
- Simmer for ten more minutes and you’re done!
- Finish the soup off with more dill, a couple pickles slices on each bowl, and some fresh black pepper.
