A tray of baked cheesy cracker snacks. They are baked double decker cracker sandwiches with salami and cheese inside.

Baked Cheesy Cracker Snacks are the perfect blissful bites. They are butter crackers layered with cheese and salami, brushed with herbed butter and baked up to perfection.

You can customize these with any cheese or deli meat that you prefer. You can also make a variety.

These will go fast so make a double batch!

A Cheesy Idea Was Born

My best friend, some of you know her as Food Toss Friday, sent me a screenshot of a picture of a cracker that was similar to this and wanted me to figure out the recipe.

She does this from time to time and she is usually on point with her requests. She is the one who came up with the idea for me to make these Thanksgiving Turkey Roll Ups.

SO I was basically given a picture and a dream and had to come up with a recipe to make my bestie happy.

I cannot be more satisfied with these little bites. They are very customizable.

These Cheesy Cracker Snacks would also make a wonderful side to a soup meal.

Two Icons, One Great Recipe

Let me tell you a little secret: I have been known to just eat these two things pictured above together. If you never had some buttery Ritz Crackers with some chive or even veggie cream cheese, you are missing out.

The Aldi brand of these crackers are another option, which I believe are called Savoritz. They are just as good, if not better. I find them to be less crumbly.

Ritz Crackers are also the cracker of choice for my Chicken Spread. It is the perfect combination.

Lovely Layering

The beauty of these Cheesy Cracker Snacks is the layers of meat and cheese. I will say that while I very much enjoyed the flavor of the baked salami, the brand I bought was a little hard to tear with my teeth once it was baked.

I will try a different brand of salami next time. Food Toss Friday and I agreed that ham and Swiss would be great, as would pepperoni and provolone.

You can really get creative with combinations.

Make Ahead

There are two ways to eat these!

You can enjoy them deliciously warm, straight from the oven. I also ate them after they sat out a little bit and they were still very delicious.

I was also thinking that I may make a version of these using my Pepper Jelly Cheese Dip as the cream cheese bake!

Baked Cheesy Cracker Snacks

Baked Cheesy Cracker Snacks

Baked Cheese Cracker Snacks are the perfect blissful bites. Butter crackers layered with cheese and salmi, brushed with herbed butter and baked up to perfection. You can customize these with any cheese or deli meat that you prefer. You can also make a variety. These will go fast so make a double batch.

Ingredients

  • 2 Sleeves of Ritz Crackers, approximately 36 crackers
  • 3 tablespoons of butter
  • 7.5 ounce container of whipped chive cream cheese
  • 8 to 10 slices of Swiss cheese
  • 12 slices of your favorite lunchmeat, I used salami
  • 1 teaspoon of garlic salt
  • pinch of black pepper
  • 2 teaspoons of dried minced onion
  • 1 teaspoon of onion powder
  • 2 teaspoons of dried parsley
  • Couple of shakes of poppy seeds *optional
  • *add dried chili powder for a little kick if you like

Instructions

  1. Heat your oven to 350 to 375 degrees. Line a baking sheet with foil and spray with a non stick spray.
  2. Spread some cream cheese on the flat side of the cracker, the top of the cracker will be the bottom. Add the lunchmeat you are using. The salami I was using was already cut in a circle. and it was a little larger than the cracker. You can cut your deli meat in squares or use a cookie cutter to cut into circles.
  3. Spread cream cheese on BOTH sides of another cracker and place the cracker top side down and press into the deli meat you are using. So the cream cheese covered flat side should be facing up. Add you piece of cheese. I cut the cheese slices into 4 pieces.
  4. Take a third cracker and spread cream cheese on the bottom of the cracker and top the stack. Press the cracker into the cheese. The top of the cracker should be the top. Repeat until you have all your crackers and and deli and cheese used up.
  5. In a sauce pan, warm your butter, add the seasonings and dried herbs and stir while on low heat for about 5 minutes.
  6. Brush each cracker stack with the butter mixture making sure to get the dried herbs on top as well. You can also pour a little of the butter on each one.
  7. Bake for 12 to 15 minutes. Every oven is different and will bake differently. Keep and eye on these the first time. Pull them out when they are golden brown and the cheese is melted. It will sllightly seep out the sides but it shouldn't be melting all over. Make sure your cream cheese is cold when assembling to make sure. A few of my lids slid off in the melting but just carefully push them back into place. Let the cracker stacks cool slightly. Once the cooled slightly they were easy to pick up and eat. These even taste good completely cooled.
