The family I cook for introduced me to this Marinated Egg concept.

What’s not to love about hard boiled eggs soaked in soy sauce and other seasonings? I can’t think of anything.

And I’ve been thinking about it a lot because this summer has been my Summer of Egg.

What does that mean?

I’m glad you asked!

I have been obsessed with farm fresh eggs from the farmer’s market this summer so I decided to try something new with my eggs and put my own spin on the marinated eggs I devour at work.

This recipe is fairly simple, but it does require some special ingredients and some time. If you give it a shot these Marinated Eggs will be your new favorite snack.

There’s a full recipe card with all of the ingredients and instructions at the end of the post, but it’s a pretty simple process.

In addition to these ingredients, you will also need 2 jars with tight fitting lids that are large enough to fit 6 eggs each. I use Weck Jars, they are my favorite.

You can make and peel the hard boiled eggs however you’d like, but I prefer using the Instant Pot, as I think it makes the eggs easier to peel.

Once they’re in the two jars with the green onions you can whisk everything else together and add it once the brown sugar is dissolved. Make sure the eggs are covered by the liquid and add more soy sauce if needed to submerge them.

Cover the eggs tightly, stick them in the fridge and leave them for hours to days.

The longer, the better!

These eggs make a great snack if you are doing a keto or low carb plan.

They also make a delicious egg salad, breakfast, or salad topper for your lunch.

I like to top them with a dollop of good quality mayo, minced green onion, and a sprinkle of sesame seeds. The eggs turn a lovely brown color on the outside while it maintains a cheerful yellow and white on the inside.

Marinated Eggs

Marinated eggs topped with green onion, mayo, and sesame seeds.

A savory delight to top sandwiches, salads, or eaten on their own.

Ingredients

  • 1 C. Seasoned Rice Wine Vinegar
  • 2 C. good quality Soy Sauce
  • 4 cloves of Garlic, crushed
  • 6 to 8 Green Onions, washed and trimmed
  • 1/4 C. Brown Sugar or any sweetener of your choice
  • 1 tsp. Dried Red Pepper Flakes
  • 2 T. Toasted Sesame Seeds
  • 12 Eggs, hard boiled and peeled

Instructions

  1. Split your twelve, peeled hard boiled eggs between two jars, six in each. I like preparing the hard boiled eggs in the Instant Pot as it makes them easier to peel.
  2. Split the green onions between each jar and pack the onions between and around the eggs.
  3. In a small saucepan, combine the rice wine vinegar, garlic, soy sauce, sesame seeds, brown sugar, and red pepper flakes and whisk until the brown sugar is dissolved.
  4. Pour the mixture over the eggs until they are covered.
  5. If they are not covered you may need to add in some more soy sauce, which is fine.
  6. Cover the jars tightly, give them a couple of turns, and place them in the fridge for a minimum of 2 hours and a maximum of 2 days. The longer they sit, the better they are.
