Saint Patrick’s Day Potatoes
While Colcannon is a traditional Irish dish, kale and cabbage are not always my favorite. Make these for your March celebrations. These potatoes have heavy cream, sour cream and sharp cheddar. The added sautéed sprouts and crispy bacon elevate your usual mashed potatoes. Perfect for Saint Patrick’s Day or any day.

Potatoes
Saint Patrick's Day Potatoes

I love these potatoes because they are similar to colcannon but with delicious brussels sprouts. You can serve the topping on the side of the potatoes and then everyone can have what they love.
Ingredients
- 6 Medium Sized Russet Potatoes
- 6 to 8 strips of bacon
- • 1/2 Stick of Butter
- • 1/4 C Heavy Cream
- • 1.5 C of Shredded Irish Cheddar
- • 2 T of Sour Cream
- • 1 lb of Brussels
- • 2 Shallots
- • Oil & Butter for cooking
- • Salt & Pepper To Taste
- • 1 T Dried Parsley
Instructions
- Peel, quarter and boil your potatoes as normal for mashed.
- Dice your shallots and cut your Brussels into ribbons. Sauté your bacon until crispy and remove from the pan.
- Add your shallots to the pan and sauté . When they are soft and golden brown, add your Brussels. Sauté until crispy and brown.You want these to have a little crunch. Add salt and pepper to taste. Then add the bacon.
- Warm the butter, cream in a pan until the butter is melted. Mash your potatoes with the 1/2 stick of butter, heavy cream and then sour cream. Shred the cheddar and fold it in to the potatoes. Add parsley and salt and pepper to taste.
- Top the mashed potatoes with the Brussels and Shallot and bacon mixture.

Brussels Sprouts
Brussels sprouts belong to the same family as kale and cabbage but have a more mild flavor in my opinion. To save time with this recipe, buy already cut Brussels sprouts that are shaved into ribbons. In addition, I also love the added beauty and color of this vegetable that looks great on top of creamy white mashed potatoes.

It’s All About The Cheese
This white cheddar cheese from Aldi is one of my favorite cheeses to use in this recipe. Additionally, I would like to say, any cheddar cheese will do for this recipe, bur I personally prefer a white cheddar and I also love a sharp cheddar to offset the creaminess of the mashed potatoes.

Oven Baked Corned Beef
A great recipe to make with these potatoes is my Oven Roasted Corned Beef with Mustard Glaze. Both of these dishes make an excellent dinner for the holiday.
