The Snow Day Cocktail is a fun and refreshing drink. The taste is slightly citrus with a touch of sweetness and the creamy flavor of coconut cream.

Topped with a fresh piece of rosemary and some festive fresh cranberry, this drink is like Christmas in a glass with a touch of the tropics.

This Snow Day Cocktail is pretty straightforward to make. There is a printable recipe card at the end of this post that will be very easy to follow.

The products used for this cocktail will be highlighted to make for easier shopping when you want to make this drink.

Cream Of Coconut

One of the main ingredients that adds both flavor and the pretty white color is the Cream of Coconut. This is easily found at most liquor stores and I find it at my local Chicago grocery store chain called Jewel Osco.

What I like about this product is that it is a syrup. It mixes REALLY well and there is hardly any separation in the drink when it is mixed.

This is what gives the beautiful white color that looks creamy in the glass but is not grainy looking.

If you buy this cream of coconut for the alcoholic drinks, you can also make “dirty cokes” for anyone who does not want to drink alcohol. This is crushed ice, coca-cola, cherries, and a squirt of this coconut cream.

This way everyone has something to enjoy!

The Vodka

I used Absolut Raspberri for the drink. This adds a very slight fruity flavor.

You can really use any berry vodka that you prefer. There are several brands.

I liked the way this one went with the coconut, sweet and sour, and the lime. I will try other vodkas in the future to add different flavor profiles to this drink.

Sweet and Sour Mix

Pictured above is the sweet and sour mix that I used. I love this Zing Zang brand. This adds some citrus flavors and a sort of smoothness to the drink.

Surprisingly, this does not make the drink overly sweet but adds a nice, bright flavor. There are many brands of sweet and sour mix you can choose from.

You Put The Lime In The Coconut

I love this limeade. You can find this EVERYWHERE!

You can also make your own limeade with the frozen concentrate.

Do not confuse LIME JUICE for this limeade. Your drinks will be way too sour using lime juice.

Simple Syrup

I cheated and bought a squeeze bottle of simple syrup from the liquor store. This is fine and it was good, but you can easily make your own simple syrup by adding equal parts water and sugar to a sauce pan and heating it and mixing it until it dissolves.

I usually do one cup of water to one cup of sugar. Some like to do two cups of water to one cup of sugar.

You will see lots of brands of simple syrup as well. If your drink is too sweet, you can add less simple syrup.

Taste as you add.

Just in case there is any confusion, pictured above is a rocks glass.

They come in many designs. They are short and round glasses.

I think these drinks look absolutely beautiful in these glasses. It is the same glass I use for my Brandy Old Fashioned drinks and my Brandy Slush.

The Snow Day Cocktail

The Snow Day Cocktail, a fun and refreshing drink. Slightly citrus with a touch of sweetness and the creamy flavor of coconut cream. Topped with a fresh piece of rosemary and some festive fresh cranberry. This drink is like Christmas in a glass and a touch of the tropics.

Ingredients

  • For One Drink
  • *all products are picture in post
  • 3 or 4 ounces of raspberry or any berry flavored vodka
  • 2 ounces of Sweet and Sour Mix
  • 0.5 ounce of simple syrup
  • 1.5 tablespoons of Cream of Coconut
  • 4 to 5 ounces of Limeade
  • 1/4 cup of granulated sugar *optional
  • 1/4 cup of limeade *optional
  • Fresh rosemary sprigs
  • Fresh cranberries, washed

Instructions

  1. Fill a 10 to 12 ounce rocks glass with ice.
  2. Pour a 1/4 cup of limeade in a bowl and add the 1/4 cup of granulated sugar to a bowl.
  3. Dip your rocks glass rim into the limeade and then into the granulated sugar to rim the glass.
  4. Fill the glass with ice.
  5. Fill a martini shaker with ice. If you do not have a martini shaker, fill a large cup with ice.
  6. Add the vodka, limeade, cream of coconut, sweet and sour mix and simple syrup to the shaker or large glass filled with ice. Place the cover on the shaker and shake REALLY well to combine the coconut cream. If using a large glass, use a separate, empty large glass and mix the drink by pouring the mix and ice back and forth between the glasses. Strain the drink out of the shaker or glass and into the ice filled rocks glass. Ice from shaking/mixing should not go in the rocks glass with the fresh ice.
  7. Top with a sprig of rosemary and two or three fresh cranberries.
