Shaved Brussels Sprouts Salad
Shaved Brussels Sprouts Salad is a great party salad and also an easy, delicious lunch option. I have been making this Shaved Brussels Sprouts Salad for years. Basically since the invention of the bag of already shaved Brussels sprouts from Trader Joes and Aldi. If you have to slice the Brussels Sprouts yourself that’s not hard to do. This salad has all the right notes for me. Savory, sweet, crunch, tender. I love that it is chock full of vegetables, a little fruit and meaty little pecans. I sometimes add chopped rotisserie chicken meat to this salad when I serve it for lunch. It is also delicious made just the vegetarian way. The Asian dressing that’s outline is also ADDICTING. The Brussels Sprouts
Most people refer to them as BRUSSEL Sprouts instead of BRUSSELS Sprouts. Most people are wrong. They ARE in fact called Brussels Sprouts, plural, as they are name after the Belgian Capital City. I usually have no problem finding the already shaved Brussels Sprouts in any grocery store I have gone to. If you do have a hard time you can easily buy whole Brussels Sprouts and slice them thinly on your own. I love this prepackaged bag of Brussels I get from Aldi. Though I usually get these shaved ones from my local grocery store. I use two bags for this Shaved Brussels Sprouts Salad.


Cheese Please
This is the brand of crumbled goat cheese that I get from Aldi. I end up actually using two of these in my salad because we really like cheese. If you do not like goat cheese and really nice sharp white cheddar cheese is a good substitute for the goat cheese. I have also used blue cheese crumbles as well in this salad and it is delicious.

Asian Inspired Dressing
I give the steps and ingredients to make a very easy and VERY delicious Asian dressing in the recipe below. In a pinch< I have found this Asian dressing from Aldi to be a really good substitute for homemade. When you do have time, give my homemade dressing a try though, because you will never go back to store bought.

Shaved Brussels Sprout Salad

A simple salad that hits all the right notes of the Fall Season. I save time by buying a bag of already shaved brussels sprouts and layer this salad with dried fruits, savory green onions, creamy goat cheese and a delicious homemade, Asian inspired dressing. This is a great recipe to make for any Fall party.
Ingredients
- For The Salad
- 2 10 ounce bag of shaved brussels sprout, or about 8 cups if you have to slice them your self
- 1 cup of dried apricots, finely minced
- 1 cup of dried cranberries, finely minced
- 1 cup of pecans, chopped
- 1 cup of salted sunflower seeds
- 1 cup of crumbled goat cheese
- 6 green onions, finely sliced
- 1 seedless cucumber, finely diced
- 2 cups of sugar snap peas, diced
- 2 cups of chopped rotisserie chicken (optional)
- For The Dressing
- 1/2 cup of soy sauce
- 1/2 cup rice vinegar
- 2 tablespoons of sesame oil
- 1/2 cup of sugar
- 1/2 cup of oil of your choice, olive, avocado, vegetable etc.
- 2 teaspoons of minced garlic
- 3 tablespoons of dried chives
- black pepper
- 2 teaspoons of toasted sesame seeds
- 1/2 teaspoon of paprika
Instructions
- Combine all of the ingredients of the salad, I like to layer it on a large platter. I try to make sure the minced dried apricots and cranberries are on the top for some festive color.
- For the dressing combine the soy sauce, sugar, vinegar, sesame, and oil of your choice in a sauce pan, and bring to a very low simmer slowly, stir continuously until the sugar is dissolved. Add in the black pepper, sesame seeds, paprika, garlic and dried chives. Simmer for three minutes.
- Let dressing cool, it can be stored in the fridge for up to 3 weeks, Dress the salad when you are ready to serve.
- This salad can be made the night before, just add the nuts and cheese when you arrive to your gathering and drizzle the dressing right before serving, or you can serve the dressing on the side.
