This Strawberry Shortcake with Honey Butter Biscuits is a truly elite dessert. Made with delicious macerated fresh strawberries, a decadent make ahead whipped cream, and baked biscuits that come from a can, this recipe is fantastic and easy and will wow your guests.

This recipe is super simple to make, though it does need to be served immediately when assembled. All of the components can be made ahead of time and assembled quickly when ready to serve.

If you do not like strawberries, you can swap any berry you like and follow the same method.

This Strawberry Shortcake with Honey Butter Biscuit recipe has some shortcuts, like using canned biscuit dough.

Don’t worry though! It will taste even better than a made-from-scratch dessert!

Canned Biscuits For The Win

Any brand of biscuit will do for this recipe so I usually use what is on sale. I do like to use this Southern Homestyle Brand that says “Butter Tastin” from time to time.

These add a richness to the dessert that I just love. They truly are “Butter Tastin.”

Make Ahead Whipped Cream

This whipped cream is so magical. It can be made AHEAD of time which makes it so convenient.

Truth be told, it is so good sometimes I just eat it on its own. I do love to also add this as a topping on my overnight French toast recipe.

The whipped cream adds so much richness and decadence to this easy recipe.

Berry Season Is The Best

With strawberries almost in season it is a great time to make this decadent dessert. The simple step of macerating these strawberries brings out so much flavor.

If you aren’t familiar with macerating, it means softening or sweetening fruits or vegetables by soaking in a liquid. It is the perfect way to sweeten strawberries that aren’t as sweet or ripe as you would like them.

Strawberry Shortcake with Honey Butter Biscuits

This strawberry shortcake is elite. Made with delicious macerated fresh strawberries, a decadent make ahed whipped cream and baked biscuits that come from a can. This recipe is fantastic and easy and will wow your guests. The perfect dessert for summer.

Ingredients

  • For The Make Ahead Whipped Cream
  • 8 ounces of cream cheese, softened
  • 1 cup of powdered sugar
  • 2 cups of heavy whipping cream
  • 1 tablespoon of vanilla extract
  • For The Berries
  • 3 cups of sliced strawberries
  • 2 tablespoons of white sugar
  • 1 teaspoon of lemon juice
  • For The Biscuits
  • 1 can of Biscuit Dough (8 biscuits) *picture of the one I use in post before recipe card.
  • 2 tablespoons of butter
  • 1 teaspoon of honey
  • Powdered Sugar for garnish

Instructions

To Make The Whipped Cream

  • Whip the cream cheese with the powder sugar on medium speed until it is smooth. I used my stand mixer for this.
  • Make sure your heavy whipping cream is cold, add that and the vanilla to a bowl and whisk by hand or with an electric mixer until peaks form. If doing by hand, this will take some time. Use a deep bowl, as the whipping cream will splash out when using an electric mixer.
  • When the peaks form, fold the whipped cream into the cream cheese mixture and beat on medium speed for 1 to 2 minutes.
  • You can use immediately or refrigerate up to three days.
  • To Make The Berries

    • Wash and thinly slice your berries. When sliced you should have about 3 cups of strawberry slices. This is about 24 ounces of berries.
    • Add the slices to a bowl and add the sugar and lemon juice.
    • Refrigerate for minimum of four hours and up to eight hours.

    Bake Your Biscuits

    • Bake your biscuits according to the package directions.
    • While the biscuits bake, melt your butter and whisk in the honey.
    • When the biscuits are done, pull them from the oven and brush with the honey butter.
    • Let cool

    Assemble Your Dessert

    • Split the biscuits in half and on the bottom half add a layer of whipped cream. About 2 tablespoons.
    • Then using a slotted spoon, add some of the berries, as many as you like, making sure to drain some of the juices from the berries. *I reserve the juices to use on pancakes or waffles.
    • Add another dollop of whipped cream on top. Then place the lid of the biscuit on top.
    • Sift some powdered sugar on top and serve immediately !
