Make Ahead Whipped Cream

This recipe for Make Ahead Whipped Cream is the perfect “something special” for all your Spring Brunches and Breakfasts. It is technically called “Stabilized Whipped Cream” because it can be made ahead of time, kept in the fridge for up to three days and used for toppings and desserts.

I love using this recipe on my French Toast Casseroles, on French Toast, Pancakes, Waffles and for Fruit Parfaits. This has the hint of the cream cheese flavor which makes it perfect for breakfast.

Make Ahead Whipped Cream

This make ahead whipped cream is perfect for your French Toast, Waffles and Pancakes. You can make it a couple of days ahead of time and serve with fresh fruit for that something special this Spring.

Ingredients

  • 8 ounces of cream cheese, softened
  • 1 cup of powdered sugar
  • 2 cups of heavy whipping cream
  • 1 tablespoon of vanilla extract

Instructions

  1. Whip the cream cheese with the powder sugar on medium speed until it is smooth. I used my stand mixer for this.
  2. Make sure your heavy whipping cream is cold, add that and the vanilla to a bowl and whisk by hand or with an electric mixer until peaks form. If doing by hand, this will take some time. Use a deep bowl, as the whipping cream will splash out when using an electric mixer.
  3. When the peaks form, fold the whipped cream into the cream cheese mixture and beat on medium speed for 1 to 2 minutes.
  4. You can use immediately or refrigerate up to three days.

Blueberry Breakfast Topping

I love making this blueberry breakfast topping to serve with this make ahead whipped cream. Lemony and sweet this goes perfectly on top of your breakfast items, especially my Make Ahead French Toast Casserole. I have never been a fan of blueberry IN my pancakes or in my French Toast because the heat makes them lose their flavor and makes them mushy. These blueberries with add a sweet, tangy flavor to your breakfast without making it seem blah. I love to top with the recipe above because it adds the creamy cream cheese flavor. I hate when french toast casseroles call for you to bake the cream cheese in, as the high heat of the oven just causes the cream cheese to dry out and curdle. This will give you all the flavors you are looking for without losing any texture or flavor.

Yield: 2 cups

Blueberry Breakfast Topping

A delicious sugary and tangy topping for your french toast, waffles, pancakes, yogurt parfaits and more. Just a couple simple ingredients and time is all it takes to make this. Best served with Make Ahead Whipped Cream.

Ingredients

  • 2 cups of fresh blueberries
  • 2 tablespoons of sugar
  • 1 tablespoon of lemon juice
  • 1/2 teaspoon of lemon zest
  • 2 tablespoons of sparkling grape juice
  • *if serving only adults, add a splash of sparkling wine instead of the grape juice

Instructions

  1. Wash and dry the blue berries, place them in a bowl and press down on them a little bit to slightly smash them but still remain intact. I use a potato masher to just ever so slightly press them.
  2. Add all of the other ingredients, stir to coat all the berries. Leave them to sit on the counter for 1 hour. Then refrigerate at least one hour before serving, can also be kept overnight and used the next day.

The Best French Toast

Making French Toast is really easy, the whipped topping and blueberries are perfect for French Toast or French Toast Casserole. You just need to remember a few tips.

  • Make sure you use butter to fry your French Toast
  • Use a bread that has high butter content like brioche
  • Make sure your batter is more like a custard than a liquid. I use 4 eggs and only 1/4 cup of whole milk.
  • Use vanilla extract
  • add sugar to the batter so you get caramelization on your French Toasts
  • don’t forget a pinch of salt and some nutmeg and cinnamon.
