Liver Sausage Spread

An Oldie But Goodie Party Appetizer

A loaf of liver sausage spread surrounded by Saltine crackers.

Liver Sausage Spread is a classic retro recipe that everyone ends up loving even if they are not sure about it at first. It’s just braunschweiger blended with cream cheese, minced onions and pickles plus some seasonings and herbs.

This is best served with a classic soda cracker. The recipe is rich, decadent, and delicious. It is always a treat.

I know that this will not be appealing to some, but it is truly a delight. Each time I have served this to people “who don’t like it” they end up loving it and are turned on to the dark side of braunschweiger!

If you just tell them it’s braunschweiger they might be too busy trying to pronounce it to ask what’s in it.

I had an old friend who used to come over and we would eat this and drink wine and it was always the most satisfying appetizer. As an onion lover, may I suggest serving some additional minced, raw onions on the side along with some capers to add to the top of the spread after it is on the cracker?

So very good.

Meet The Braunschweiger

If you have never even heard of braunschweiger, I have posted a picture of this above so that you know what to look for in the store.

Buy the Oscar Mayer brand if you are new to this food. It is the least intense flavored of all the braunschweiger.

As a child this was a real treat to eat on toasted white bread with lots of mayonnaise. It was one of my favorite lunches.

You can see why I was not very popular in school, bringing a sandwich like this.

Those Are Some Fine Onions

It is very, very important to make sure to mince your onions very finely for this recipe. You do not want to be biting into huge chunks of onions when you blend this dip together.

After you chop your onions initially, make sure to run your knife over the onions a few times.

Alternatively you can put your onion and the pickles through the food processor. You can also grate them on a cheese grater.

I like to serve extra pickles and onions in little bowls on the side of this dip. People may like to add these to the top of their crackers.

I sometimes also add a little bit of finely minced, hard boiled eggs.

If Liver Just Isn’t For You

If liver just isn’t for you, you can make my retro Chicken Spread recipe.

This spread is also deliciously vintage and has a much more familiar flavor. I love to eat this spread with butter round crackers. Better yet make BOTH of these recipes!
