I have been in a salad state of mind for the last few weeks. I haven’t been home much to have access to my little grill and I just can’t bring myself to heat up the house with a hot stove or oven. This is why I have been making mostly no cook salads for dinner like this Seven Layer Salad I made today for dinner. This Seven Layer Salad is a salad I used to have to make when I worked in the deli of a local grocery store. This was one of the most popular recipes we sold…

I have been resurrecting a lot of classic recipes that I find in my Grandma’s cookbooks and giving them a modern day makeover. I came up with this recipe for an Asian Grilled Chicken Sandwich using a classic kitchen hack where you marinate your chicken breasts in Zesty Italian Salad Dressing. This Asian Grilled Chicken Sandwich reminds me of a play on a Vietnamese Bahn Mi Sandwich. A Bahn Mi Sandwich is a typical Vietnamese Sandwich on a French Baguette and stuffed with marinated meats, cucumbers, herbs and pickled veggies. Last Sunday we were having Mister Tipsy’s Dad over for…

If I’ve said it once, I’ve said it a hundred times, I can’t bake. Not only can I not bake but I also would say that I despise baking. It is too precise for my cooking style. As much as I love to cook even I get tired of thinking of things to make for dinner. I have mentioned before that I hate eating leftovers. So inevitably, I have to think of something different to make for dinner almost every single night. Some nights I make more complicated meals but I do have a litany of quick and easy recipes that grown ups and kids both love. These Baked Parmesan Chicken Tenders are one of those quick and easy recipes. Mister Tipsy and I love them and the kids I used to cook for loved them too.…

When it comes to cooking, I have some strengths. One of my greatest strengths is my ability to make a pretty great Submarine Sandwich. It is one of the things that Mister Tipsy requests the most. Every year he goes on a guys trip to Florida and he specifically requests that I make this Submarine Sandwich for him and his friends to take on the plane. The ingredients for this sub are simple, but they are very specific. If I substitute any of the ingredients from what I normally use, it just doesn’t taste the same. I am not…
