A One Pot Wonder That Simmers Up In Under An Hour

Everyone loves a warm soup on a cold day. This Skillet Sausage Soup is a soup you can make on a busy day that takes around one hour to make.
The flavorful Italian sausage along with onions, marinara, chickpeas, pasta, and peas adds depth of flavor with very little cook time. This soup will warm you from the inside out.

Sausage and Onions Do The Trick
This skillet soup has very few ingredients. The Italian sausage and onions being the main source of flavor. You do not need a lot of seasonings in this soup because the sausage has lots of seasoning and herbs.
You remove the sausage from the casing so that the sausage is able to caramelize and add even more depth of flavor to this soup. This step reminds me of the sausage step in my recipe for the Best Vodka Sauce.

Use Bouillon To Your Advantage

Paprika For Peppers
I use paprika in this recipe to add the flavor of red peppers without having to clean and cut up an actual red peppers This is one of those spices that you should measure with your heart.
The amount I use may be too much for you. Start with a little, taste, and add more if needed.

Skillet Sausage Soup

Everyone loves a warm soup on a cold day. This Skillet Sausage Soup is a soup you can make on a busy day that takes around one hour to make. The flavorful Italian sausage, along with onions, marinara, chickpeas, pasta and peas, adds depth of flavor with very little cook time. This soup will warm you from the inside out.
Ingredients
- 1 lb of Mild Italian Sausage
- 1 large, yellow onion, chopped
- 1 jar of your favorite marinara sauce
- 2 tablespoons of olive oil
- 1 can of chickpeas, drained
- 1 cup of small, uncooked pasta, I used Ditalini
- 1 cup of frozen peas
- 2 tablespoons of dried Italian seasonings
- 1/2 tablespoon of paprika
- 10 cups of water
- 2 heaping tablespoons of chicken bouillon, I used Better Than Bouillon brand
Instructions
- Add your olive oil and onion to a deep sided skillet or soup pot. Cook until the onions are softened and golden brown.
- Remove the sausage from the casings and add to the skillet with the onions. Cook fully and until the sausages are golden brown. Break them up into small, bite sized pieces as they cook.
- Add the Italian seasoning and the paprika, and cook for a few minutes.
- Add the bouillon and cook for a few more minutes. Then add your marinara sauce. Empty the jar then fill it halfway and shake to get the rest of the sauce out and add to the pot. Cook for a few minutes, then add the water per the ingredient list.
- Bring this to a simmer, cover, and simmer for 30 minutes. Then add the uncooked pasta, the drained chickpeas, and the peas. Bring to a simmer, cover, and simmer another 15 minutes until the pasta is fully cooked.
- Serve with Parmesan cheese and a nice Italian bread toasted with some olive oil.
