Savor the Southwestern flavors with my tantalizing Taco Pie! It features a delightful twist of Jiffy corn mix as the base.

When you think about a savory pie, you might imagine the meat pies of England. Well I’m here to tell you we have some great savory pies in the states as well. This Taco Pie is a Tex Mex delight that will pleasantly surprise your guests.

It has layers of seasoned ground beef, zesty salsa, and cheddar cheese all on a golden, buttery Jiffy cornbread base. This makes for a mouthwatering meal that’s as easy to make as it is delicious to devour.

This Taco Pie is sure to become a family favorite for busy weeknights or casual gatherings. Get ready to dive into a slice of comfort with every bite!

Food brings comfort to many in difficult situations. It helps people who are suffering by nourishing them and taking a chore off their list when just breathing seems impossible.

If people have friends and family that are suffering, food gives them something to do in order to try and bring comfort to people they care about while they’re struggling.

Recent events in my own life had me thinking about these subjects and are the reason for this Taco Pie recipe. It seemed like a comforting dish that was simple, inexpensive, easy to heat up and would keep well for a few days.

This Taco Pie isn’t only for sad times, of course. It also makes a great weeknight meal, potluck dish, and simple supper for Halloween night.

Easy To Find Ingredients

The ingredients for this recipe are pretty self explanatory.

I included pictures of the two most “unique” ingredients that some may not be familiar with. You are welcome to make any substitutions for these ingredients.

I like to make that clear share not everyone is familiar with or doesn’t have access to the same ingredients. I love using this Jiffy Corn Muffin mix because it is so affordable and easy to keep on hand for last minute recipe ideas like this one.

The tomatoes I use have some spice, but are not “burn your mouth spicy”.

Meal Prep To Save Time

If you are the type of person who likes to meal prep on weekends, you can prep the taco meat and all the veggies for this recipe ahead of time.

When you want to make this for dinner, you can mix the Jiffy Corn Muffin Mix base for the Taco Pie, then add your meat and your dinner is basically done after baking.

Ingredients

  • 2 Boxes of Jiffy Corn Muffin Mix
  • 2 Eggs
  • 1 1/3C of Sour Cream, split
  • 1/3 C of Milk
  • 2 lbs of Ground Beef
  • 1 10oz Can of Diced Tomatoes with Green Chilis
  • 1 Packet of Taco Seasoning
  • 3 C of Shredded Cheddar Cheese
  • 2 C of Lettuce, Shredded
  • 1 C of Salsa

Instructions

  • In a skillet prepare your taco meat according to the packet. Brown your ground beef, add the taco seasoning packet and only 1/2 the amount of water it calls for. Cook until any liquid is evaporated.
  • Meanwhile, heat your oven to 350 degrees.
  • In a bowl combine your 2 Jiffy Corn Muffin Mix, 2 Eggs, 1/3 C of milk, 1/3 C of Sour Cream in a bowl. If the mixture doesn't look wet enough add a couple more tablespoons of sour cream to the mix.
  • In a 15 x 10 Casserole dish, spray with non stick spray, then layer the meat on the bottom.
  • Drain your can of tomatoes and spread on top of the meat mixture.
  • Spread the corn muffin mix across the top and spread with a spoon. I sprayed a spoon with non stick spray to help spread the muffin mix.
  • Top with 2 C of Cheddar Cheese across the whole top. You can use less or more if you like.
  • Bake at 350 degrees for 35 minutes or until the corn bread is firm in the middle.
  • Let cool for 20 minutes.Slice into squares and top with sour cream, lettuce, cheese and salsa

Another Quick Meal Idea

If you like the idea of this Taco Pie, try this Chicken in a Lobster Sauce dinner. This is basically a one skillet meal that everyone will love. There are no actual lobster pieces in this recipe which also makes it affordable.
