This Special Strawberry Shortcake is made with a Twinkie base, sugared strawberries, and a delicious whipped cream that keeps in the fridge for days. Make Ahead Whipped Cream

This make ahead whipped cream is perfect for the recipe. It won’t deflate as it sits in the fridge, a miracle made possible by the cream cheese that is in the recipe.

This is a great recipe to make if you have guests and want to serve desserts or breakfast with whipped cream. That way you do not have to be making fresh whipped cream each time.

Seasonal Fresh Berries

This dessert is a great way to take advantage of the season’s best berries. My recipe calls for berries that are macerated, meaning they make their own juices that taste great on this dessert.

You can also use blueberries, raspberries, or blackberries. The addition of blueberries would make this a great dessert to serve on the Fourth Of July.

Special Twinkie Base

Using a Twinkie base for this recipe adds something special to this strawberry shortcake. It is also just a fun addition. The best part about this recipe is that it is easily adjustable to feed a crowd or just two people.

Special strawberry shortcake

This special strawberry shortcake is made with a Twinkie base, sugared strawberries and a delicious whipped cream that keeps in the fridge for days. This dessert is decadent and delicious and has all the fresh flavors of Summer.

Ingredients

  • 3 cups of quartered, fresh strawberries
  • 1 tablespoon of white sugar
  • 1 tablespoon of honey
  • 6 to 8 Hostess Twinkies
  • 8 ounces of cream cheese, softened
  • 1 cup of powdered sugar
  • 2 cups of heavy whipping cream
  • 1 tablespoon of vanilla extract

Instructions

Make Ahead Whipped Cream

  • Whip the cream cheese with the powder sugar on medium speed until it is smooth. I used my stand mixer for this.
  • Make sure your heavy whipping cream is cold, add that and the vanilla to a bowl and whisk by hand or with an electric mixer until peaks form. If doing by hand, this will take some time. Use a deep bowl, as the whipping cream will splash out when using an electric mixer.
  • When the peaks form, fold the whipped cream into the cream cheese mixture and beat on medium speed for 1 to 2 minutes.
  • You can use immediately or refrigerate up to three days.
  • For The Strawberries

    • Add the berries to a bowl and dust in the white sugar and then add in the honey.
    • Toss to coat and refrigerate 4 to 6 hours.

    To Assemble The Special Strawberry Shortcake

    • For each individual serving, split the twinkie in half , lengthwise and add to a plate or bowl.
    • Add a spoonful of berries and their juices that are created in the bowl.
    • Add a dollop of make ahead whipped cream.
    • Add another scoop of berries.

    * you can also make blueberries the same as the strawberries and make a red, white and blue shortcake for the holiday.
