Lasagna Soup

Ingredients
- 6 Italian Sausage Links, Casings Removed
- 1 Medium Onion, Diced
- 4 Cloves of Garlic, Diced
- 4 T of Tomato Paste
- 2 15 oz Cans Diced Tomatoes
- 8 C Chicken Broth
- 2 T Dried Oregano
- 10 to 12 Lasagna Noodles Broken up and Boiled
- 1 C Heavy Cream
- 1 C Shredded Parmesan
- 1 C Ricotta
- Fresh Basil, minced
Instructions
- Brown sausage, onion, garlic, add tomato paste and sauté until darker red.
- Add in Diced tomato, Oregano and chicken broth. Simmer 15 minutes.
- Add in heavy cream and Parmesan, simmer five minutes, turn off heat.
- Add in cooked noodles.
- Serve in soup bowls topped with Ricotta and Basil on top.
