Delightful and Delicious For Spring and Summer

Vegetable Pizza is a family classic at all of my family parties. You start with a crescent roll crust and layered with seasoned cream cheese, thin slices of cucumber, shredded carrot and finely chopped broccoli. This is light and delicious and perfect for Spring and Summer parties.

Onion Juice, What Is It?

Onion juice is exactly what you think it is. It is the juice from onions and it adds great flavor of onion to lots of recipes when you do not want to be biting into chunks of onion. It is also a great shortcut when you want onion flavor and do not want to chopping up onions.

I love it for this recipe because it adds great flavor to the cream cheese mixture without the string flavor of raw onions or the crunch and smell of raw onions.

Where To Buy

I have always been able to find this in most grocery stores. It is usually one of those items that has always been there but you have never looked for. I have also spotted it at Walmart. It is sometimes in the pickle aisle, sometimes by the condiments and sometimes you will find it in the liquor section by the specialty cocktail making things. Like where they sell the bitters and cheery juice.

Other Uses

You can also use onion juice in salad dressing, soups, in meat marinades, as well as Bloody Mary’s. I think you will find it to be perfect for meat marinades for grilling as it adds the onion flavor without the chunks of onions left to burn off when grilled at a high heat.

Buttermilk Powder

Buttermilk powder is another ingredient you see in this recipe that may be unfamiliar to you. It is another ingredient that hides in plain sight. You can find this in almost ANY baking aisle. You can also find many brands on Amazon. This adds the tanginess of ranch powder without the MSG that so many feel they are sensitive to. I also use this buttermilk powder in my French Quarter Dressing and to make my Roasted Chicken. You will find this to be a great addition to your pantry.

Cutting Your Vegetables

There is nothing I hate more on a veggie pizza then when the vegetables are cut thick and they slide off the pizza when you bite into them. Be sure to cut your cucumbers very thin for this recipe. I sometimes cut the cucumber in half, stick a fork in the end and use my vegetable peeler to peel off slices from the tip. This ensures very thin slices and a perfect bite.

Be sure to shred the carrot for this recipe, it adds nice texture and looks very pretty on top of the pizza.

I like to chop up the broccoli very small so that it looks pretty, but also so you are not getting a huge chunk of raw broccoli when biting into your pizza.

The way you cut your vegetables will make all the difference in how this is served and how it looks.

Vegetable Pizza Appetizer

Vegetable Pizza is a family classic at all of my family parties. You start with a crescent roll crust and layer seasoned cream cheese, thin slices of cucumber, shredded carrot and finely chopped broccoli. This is light and delicious and perfect for Spring and Summer parties.

Ingredients

  • 2 cans of crescent rolls
  • 2 packages of cream cheese
  • 1 tablespoon of dried dill
  • 2 tablespoons of pickle juice
  • 1 tablespoon of mayonnaise
  • 1 teaspoon of celery salt (you can taste and add more)
  • 1 teaspoon of buttermilk powder (see post for more information)
  • 2 tablespoons of finely minced fresh chives
  • 1 teaspoon of onion powder
  • 1 tablespoon of onion juice (see post for more information)
  • 1 carrot, shredded
  • 1/2 seedless cucumber, sliced thin
  • 1 C of broccoli crowns, minced

Instructions

  1. Spread crescent rolls on a round or square baking sheet. I cover my pan in tin foil. Make sure you press the dough until it's one cohesive sheet. Take a fork and poke holes all over the dough.
  2. Bake in a 350 oven for about 15 to 20 min.
  3. Combine the cream cheese, mayonnaise, pickle and onion juices, dill, buttermilk powder
  4. Let the crescent roll crust cool. When it's cool spread the cream cheese all across.
  5. Top with broccoli, you will have to press it into the cream cheese.
  6. Top with shredded carrots, the the cucumber slices.
  7. Season the top with a light dusting of celery salt and some dried dill or parsley.
