Worcestershire Powder
This is a newer to me ingredient that I have ben trying out in a few recipes. I am a big fan of the flavor of Worcestershire Sauce but sometimes I want less liquid in a dish.
I also have been finding out that I love using this to make my own Bloody Mary mix for a special flavor and texture.
I loved it in this recipe for Mediterranean Inspired Hamburger Pitas with Peppers and Onions because it sort of bound the meat together, making a bit of a gravy which tasted delicious.
This ingredient is ideal for making the croutons in this salad because using liquid Worcestershire sauce makes the bread too soggy and it does not crisp up as well in the oven.
I also like the texture that it gives to the dressing.

My New Favorite Ingredient
I recently discovered this lemon powder when I got on a smoothie kick. I was looking for something to boost my vitamin C and I also wanted to add it to water.
I liked the way this powder dissolved and the intense flavor it added, so I started using it to make some salad dressings and marinades.
It is more reliable then the lemons I get fresh from the store. The flavor is consistent and it is much easier to measure.

A Wonderful Dressing
The two powders make a wonderful and flavorful dressing. If you do not want to buy the powders you can certainly substitute fresh lemon and Worcestershire sauce from the bottle, just keep in mind this will change the texture of your dressing.
As far as the croutons go, you can also sub but they may not be as crisp when they are baked.

Ingredients
- For The Croutons
- 4 Ciabatta Rolls (cut into bite sized cubes)
- 4 tablespoons of butter
- 1/2 tablespoon of Worcestershire powder (see post for details)
- 1/4 teaspoon of lemon powder (see post for details)
- 1 tablespoon of dried parsley
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/4 teaspoon of black pepper
- *seasoning measurements are adjustable to preference
- For the Dressing
- 1.5 Cups of Mayo
- 1 tablespoon of grainy mustard
- 2 tablespoons of rice vinegar
- 1/2 tablespoon of Worcestershire powder
- 1/2 teaspoon of lemon powder
- 1/2 tablespoon of minced garlic
- 1/2 tablespoon of dried parsley
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Additional Ingredients
- 3 stalks of romaine lettuce, washed and chopped
- 1/4 cup of grated Parmesan cheese
Instructions
- To make the croutons, dice the bread into bite sized cubes and add to a large bowl. In a another bowl add your butter and place in microwave and melt. Add the remaining ingredients to the melted butter and whisk until well combined. Taste and adjust the seasonings to your preference.
- Pour the melted butter mixture over the bread cubes and toss really well to coat. Spread on a baking sheet and bake at 400 degrees for approximately 15 minutes until they are really crunchy. All ovens will bake differently, so keep an eye on these the first time you make them. Remove from oven to cool and set aside.
- To make the dressing I usually eyeball the ingredients, but I included measurements to get you started. This dressing can be made ahead of time and will keep for a few days at least. You can also make this dressing as thin or as thick as you like, simply adjust the mayo and vinegar amounts to your liking.
- To make the dressing, combine all the ingredients in a bowl and whisk until very well combined. Place into a bowl or salad dressing container and refrigerate for one hour before serving. You can start by using a little of the ingredients at a time, taste and add more. The lemon powder is very strong, use sparingly.
- Add dressing to your lettuce, toss to coat, add the Parmesan cheese and toss then top with black pepper and croutons and serve.
