This Red Stick Cheese Spread is made from scratch to taste just like the nostalgic cheese and cracker snack packs we all grew up loving. Creamy, fluffy and full of savory cheddar flavor that’s perfect for crackers, pretzels, and easy summer snacking at the cabin, on the boat, or around the campfire.

When I was a kid, one of my favorite things was going grocery shopping with my mom at a store called West Lawn near our house on Pulaski Avenue. I still remember being fascinated by their meat department even back then!

LOL!

I can still picture the produce section where they kept a little basket filled with those cheese and cracker snack packs. You know, the ones with the tiny red spreader stick.

My mom would let me pick out a couple of those, sometimes with individually wrapped Fruit Roll-Ups. To me, that felt like hitting the jackpot for the day.

I wanted to recreate that same nostalgic flavor and texture at home so I started experimenting with different cheese combinations until I landed on this version. It tastes almost exactly like the spread from those childhood snack packs, just without some of the extra ingredients and bright orange coloring.

This is one of those simple little recipes that is perfect with crackers or maybe a glass of wine! Pack this into a cooler for the boat or spread onto a burger for a little salty, creamy nostalgia.

Evaporated Milk

Evaporated milk is simply regular milk that has had some of the water cooked out of it. This gives it a richer, creamier texture and slightly cooked dairy flavor.

It is usually sold in cans near the baking aisle. It should not be confused with sweetened condensed milk, which has added sugar and would make this recipe overly sweet.

In this recipe, evaporated milk helps create that smooth, creamy “processed cheese” texture of the classic snacks. Be sure to add the evaporated milk a little at a time while blending.

Do this until the spread reaches the exact consistency you prefer. Some people like it thick for spreading while others prefer it softer and more pipe-able for crackers or burgers.

What is MSG?

MSG, which stands for monosodium glutamate, is a flavor enhancer that boosts savory flavors. It gives foods that rich “can’t stop eating it” taste people often associate with snack foods.

Despite the reputation it developed years ago, research has shown that MSG is generally considered safe for most people, though some may feel sensitive to large amounts of it in heavily processed foods. This is likely where much of the confusion about “MSG allergies” originated.

If you wanted to recreate more of that nostalgic snack cracker flavor in this recipe, you could add just a tiny pinch of MSG to enhance the cheesy, savory taste. You can also achieve a similar effect by using a little soy sauce, soy sauce powder, or Worcestershire sauce, which all naturally bring that deep umami flavor to the spread.

I personally like to use Worcestershire powder in this recipe because it adds that savory depth without thinning out the texture of the cheese spread.

To Process Or Not To Process

A food processor works best for this recipe because it helps whip the cheeses together into that smooth, fluffy texture. This is what tastes similar to the nostalgic cheese cracker spreads many of us grew up with.

The fast blade also helps fully blend the cream cheese, cheddar, and seasonings together without leaving the spread grainy or lumpy. If you do not have a food processor, you can still make this recipe using a hand mixer or sturdy blender.

Just make sure all of the cheeses and butter are softened to room temperature first. Next, beat everything together slowly while adding the evaporated milk a little at a time until the spread becomes smooth and creamy.

My Gram’s Favorite

My grandma absolutely loved Club Crackers. Ever since she passed away I almost always keep a box in the pantry because they remind me of her.

Their buttery, flaky texture pairs perfectly with this cheese spread. Together they taste just like a grown-up version of those nostalgic childhood snack packs.

If Club Crackers are not your thing, this spread is also delicious with celery sticks, pretzels, or just about any type of cracker you enjoy. It is even great as a dip for breadsticks or spread onto a burger for a salty, creamy little upgrade.

My Gram loved that Kraft Old English Cheese Spread in the little jar, then she would save the jars. They still sell this.

She also loved the Blue Cheese one that is hard to find now. I have a recipe for Stuffed Celery that uses this Kraft Jar Cheese, but you could certainly sub this new recipe for the jar cheese.

Keep It For A Week Or Bring To A Friend

This cheese spread should keep well in the refrigerator for about 5 to 7 days when stored in an airtight container. Since it contains dairy products like cream cheese and shredded cheese, I recommend keeping it chilled and avoiding leaving it out for long periods during warm summer weather.

In the summertime I always like having a little snack or dip ready to go in the fridge for impromptu happy hours, boat snacks, or when people stop by unexpectedly. This is one of those perfect recipes to keep on hand.

It is easy to scoop onto crackers, celery, or pretzels whenever you need a quick salty snack.

I also think this is such a thoughtful little thing to make for someone who may need a little extra help or comfort during a difficult time. Sometimes large casseroles and heavy meals can feel overwhelming, but a simple homemade snack spread like this paired with some nice crackers, cut vegetables, and maybe a favorite bottle of wine or special nonalcoholic drink can feel much more manageable and comforting.

Red Stick Cheese Spread Recipe

This Red Stick Cheese Spread is creamy, fluffy and packed with nostalgic flavor that tastes just like the classic cheese and cracker snack packs from childhood. Perfect for crackers, pretzels, or veggies, this easy spread makes a great party appetizer, boat snack, or Northwoods happy hour treat.

Ingredients

  • 8 ounces sharp cheddar cheese, very finely shredded
  • 4 ounces American cheese, very finely shredded
  • 4 ounces cream cheese, softened
  • 2 tablespoons butter, softened
  • 2 to 4 tablespoons evaporated milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1 teaspoon Worcestershire sauce or Worcestershire powder
  • 1/2 teaspoon salt
  • Pinch of cayenne pepper, optional
  • Pinch of MSG *optional **see post for more information

Instructions

  1. Add all ingredients except the evaporated milk to a food processor. This recipe can be made in a mixer or with a hand mixer, but a food processor is most recommended.
  2. Blend until smooth and fluffy, stopping to scrape down the sides several times.
  3. Add evaporated milk one tablespoon at a time until the mixture becomes smooth and spreadable.
  4. You can stop and taste and add more seasoning if you like, reminder that the flavors will "bloom" during the rest time so make sure to note this. *see post for more information
  5. Continue whipping for 2 to 3 minutes for a light texture.
  6. Chill for one hour before serving. Serve with crackers, pretzels, or vegetables.
