Lasagna Soup


6 Italian Sausage Links, Casings Removed

1 Medium Onion, Diced

4 Cloves of Garlic, Diced

4 T of Tomato Paste

2 15 oz  Cans Diced Tomatoes

8 C Chicken Broth 

2 T Dried Oregano

10 to 12 Lasagna Noodles Broken up and Boiled

1 C Heavy Cream

1 C Shredded Parmesan 

1 C Ricotta

1/2 Fresh Basil Minced

  • Brown sausage, onion, garlic, add tomato paste and sauté until darker red.
  • Add in Diced tomato, Oregano and chicken broth. Simmer 15 minutes.
  • Add in heavy cream and Parmesan, simmer five minutes, turn off heat.
  • Add in cooked noodles.
  • Serve in soup bowls topped with Ricotta and Basil on top.
