After School Soup
Perfect for Kids

This After School Soup is a nutritious and delicious soup that will warm up the kids and cure their hunger.
This is also a delicious soup that is great for a work from home lunch. Serve this soup with a delicious salad or sandwich, some fresh baked bread, or a loaded baked potato for an easy and complete dinner idea!

Easier Than Homemade
Typically I make my own bone broth and it takes 24 hours.
I was recently asked to collaborate with this brand that sells bone broth at Whole Foods and I was very happy with how it tastes and the ingredients in it.
It definitely saved me some time in the kitchen.
Season to Taste
I love to use A LOT of fresh dill for this recipe. I think It adds such great flavor to the soup. If dill isn’t your thing, or you are afraid the kids won’t be into it, you can omit it.
You can also feel free to experiment with other herbs and seasonings according to your preferences. I often prefer to taste as I go.
That way you won’t risk using too many of any one spice and you’ll have a good sense of the baseline for next time.

After School Soup

An easy soup that will warm up the kids after school that is nutritious and delicious. This soup is also great for a work from home lunch!
Ingredients
- 5 to 6 cups of Savory Chicken Bone Broth or any broth you choose
- 1/ 2 cup yellow onion, diced
- 1/ 2 cup carrots, diced
- 1/ 2 cup celery, diced
- 2 cups of pasta
- 1 tablespoons olive oil
- Fresh Dill, minced, to taste
- Black Pepper, to taste.
Instructions
STEP 1
Add your veggies to a soup pot along with the olive oil and saute for several minutes until they are soft. The smaller the veggies are sliced, the more quickly they will cook.
STEP 2
Add your Broth and bring to a low simmer, simmer for 5 minutes.
STEP 3
Add your noodles and boil on low until the noodles are soft. The cut cappellini cooks quickly, use a smaller pasta to shorten cooking time.
STEP 4
Add fresh dill that is minced and black pepper to taste.
