Peppers and Provolone Salad
A Bright & Delightful Summer Salad

Peppers and Provolone Salad is a warm weather delight. Picture a vibrant medley of diced red, yellow, and orange peppers tossed together in a bowl.

Easy Dinner Idea
A great way to serve this salad is with some grilled Italian Sausage.
I like to grill up a few links of spicy sausage in a skillet and serve them sliced with the salad on the side. You can also use this salad as a topping for a delicious Italian Sausage Sandwich.

The Dressing
I love using this Garlic Expressions Dressing. It has been a long time pantry staple for me.
I like to use it as a marinade and salad dressing and I also use it in my famous Pizza Salad and The Best Ever Tomato Bruschetta.
Recently I found a three pack at Costco for around nine dollars. If you cannot find this dressing, Aldi also has a great garlic vinaigrette with the chunks of garlic in it.
In an absolute pinch, an Italian Dressing will also be fine. I just think this brand adds a light and flavorful taste to this salad.
Do Not Use Alot
You will see this recipe calls for a small amount of dressing. This is because the peppers will also make their own flavorful juices as they sit macerating in the dressing.
You can always add more later if you want more flavor. Two to three tablespoons will be plenty, as you will see.

Tomato Powder, The Gift That Keeps On Giving
This is yet another recipe that I use tomato powder for. This tomato powder is $8 on Amazon.

My most famous recipe with this ingredient is my Tangy Tomato BLT Pasta Salad.
This powder is JUST dehydrated tomatoes. A lot of people think it is like tomato bouillon but it is not.
Bouillon has salt and MSG so that would be too much sodium for this recipe. If you absolutely do not want to order this powder you can omit it, but it really amps up the tangy tomato flavor of this salad.
You can also use the powder in many other recipes like soups, stews, and pasta sauce.
But thatés not all!
I add it to mayo that I use for sandwiches.
I also use it to make salad dressing and ités great in chili. I promise Iém not being paid, this is just a product I believe in!
Even if you never use it again, I highly recommend getting it for this salad because it will blow you away with how good it makes the dressing.

Celery Powder, THE Powder Of The Summer
A second unique ingredient that I add to this dish is celery powder. This may be an ingredient many of you have never heard of before but it also adds great depth of flavor.

Other Uses For Celery Powder
Add celery powder to your salad dressings and soups. It is really delicious in tuna salad and I even add this to smoothies from time to time.
You will be so shocked at how much flavor it adds without needing to chomp on celery chunks.

Hold The Cheese
This recipe calls for diced and sliced provolone cheese. Be sure to add this right before serving as the cheese will start to cure in the vinaigrette dressing and get hard.
You can also use mozzarella cheese. I sometimes add the mini balls of fresh mozzarella to this salad as well.
Just be sure to hold off on all cheese until right before serving.

Whether you choose to pair this salad with sausage, burgers, or even eat it on its own it’s sure to become a new summer favorite.

Ingredients
- 6 bell peppers, use a mix of red, yellow and orange
- 1 small yellow onion, grated on a cheese grater, reserve the juice
- 2 to 3 tablespoons of your favorite vinaigrette
- 2 teaspoons of celery powder (optional)
- 1 tablespoon of tomato powder (optional)
- 1 teaspoon of celery salt
- 1 teaspoon of celery seed
- 1 tablespoon of dried oregano (adjust to your preference or use fresh)
- 1/2 tablespoon of dried parsley or 1 tablespoon of fresh minced
- 1/2 tablespoon of white sugar or honey
- 1 tablespoon of water
- 1/4 pound of sliced provolone, diced

Instructions
- Wash your peppers. If you get acid reflux from peppers, you can also peel them. then dice these peppers into small bite sized pieces. I like them very small. Add these to a bowl.
- Grate your onion and add the onion and the onion juice to the bowl. If you have a bit of onion left, you can finely dice that and add it as well.
- Add the garlic vinaigrette , I prefer to use garlic Expressions or the Aldi brand. Add the sugar, seasonings and herbs, celery and tomato powder and water, and whisk until the sugar and powder is well combined.
- Add the dressing to the peppers. You can serve this right away or you can let it sit in the fridge for a couple of hours. It also keeps overnight and I have had it last a couple of days in the fridge.
- Before serving, add the diced provolone cheese. Do not add it before because it will absorb the vinaigrette and start to cure. I like to add some cracker black pepper before serving.
- I serve this with pan fried or grilled italian Sausage. This also makes a great topping for an Italian Sausage sandwich.
