You read the title right, this is the BEST Guacamole. The chunky guacamole with onion is a delightfully simple yet flavorful dip perfect for any occasion.

Onion Juice, The Secret Ingredient

I have shared this onion juice before. I use it for my Vegetable Pizza Appetizer.

The onion juice adds great flavor to the guacamole and in my non scientific opinion, keeps the avocado from turning brown quickly.

This ingredient is, of course, optional but it is a good one to have on hand.

Where To Buy Onion Juice

I have always been able to find this onion juice in most grocery stores. It is usually one of those items that has always been there but you have never looked for.

I have also spotted it at Walmart. It is sometimes in the pickle aisle, sometimes by the condiments, and sometimes you will find it in the liquor section by the specialty cocktail making things like where they sell the bitters and cherry juice.

You can also order a brand on Amazon that is very good called Howardés Onion Juice.

Other Uses

You can also use onion juice in salad dressing, soups, in meat marinades and Bloody Marys.

I think you will find it to be perfect for meat marinades for grilling as it adds the onion flavor without the chunks of onions left to burn off when grilled at a high heat.

Celery Powder

A second unique ingredient that I add to my guacamole is celery powder. This may be an ingredient many of you have never heard of before but it adds a great depth of flavor.

Other Uses For Celery Powder

Add celery powder to your salad dressings, soups, and it is really delicious in tuna salad. I also add this to smoothies from time to time.

You will be so shocked at how great of a flavor this adds to your guacamole without having to bite into chunks of celery.

Ingredients

  • 4 to 6 ripe avocados
  • 1 small yellow onion or any sweet onion
  • 1 small red onion, minced
  • 1 tablespoon of onion juice (optional)
  • 1 teaspoon of celery powder
  • 1 1/2 teaspoons of salt, or to taste
  • 1/2 teaspoon of black pepper (or to taste)
  • 1 tablespoon of finely minced cilantro (optional)
  • 1 lime, squeezed
  • *all unique ingredients explained in the post, before the recipe card, pictures and links included

Instructions

  1. Split your avocados and add the avocado to a large bowl. I like to set one aside and dice the avocado to add in at the end.
  2. Grate your small yellow or sweet onion on a cheese grater into a bowl making sure to reserve the onion juice.
  3. Very finely dice your red onion into tiny pieces.
  4. Season the avocado with the grated onion and the onion juice, salt, pepper, celery powder, and bottled onion juice. I then use my ground meat chopper or a fork to rough chop the avocado until it is slight creamy but still has some chunks and combine it with the ingredients.
  5. Fold in the red onion and then squeeze the juice of the one lime over the whole thing and fold that in as well.
  6. Next I add in the cilantro and the diced avocado, carefully fold this in so the diced avocado chunks remain mostly intact.
  7. Add to a serving bowl and sprinkle the top with more salt and serve immediately.
