I was able to recreate this dip after my cousin had told me about something similar her local butcher makes. There is a paragraph below outlining where I got the burnt ends along with some alternatives for this ingredient.

What Are Burnt Ends?

Burnt ends are slow-smoked, cubed, and caramelized pieces of meat known for their sweet flavor and mouth watering texture. They’re made from either brisket or pork belly meat and, despite their name, burnt ends arenét burnt at all.

They’re toothsome, BBQ bark crust gives them a burnt appearance but the texture is chewy and they taste like smoked spices and meat.

The burnt ends add a smoky and delicious barbecue flavor to this dip.

Where To Buy Burnt Ends

I got the burnt ends that I used for this dip at Costco. They were in the refrigerator section and I was able to portion out the package into three servings to make this dip.

I put the other two portions in the freezer to use for another time.

The burnt ends from Costco added a rich barbecue flavor that went really well with this dip.

Alternative Products

I have been told that Trader Joe’s also sells ready to eat burnt ends as do other grocery stores like Walmart. You can also use ready to heat and eat pulled pork or barbecue pork if you cannot find burnt ends.

Another option would be to buy some good quality thick cut bacon. Cut the bacon into bite sized pieces, cook until well caramelized, and then add a tiny bit of barbecue sauce and let this caramelize on the bacon.

Let this cool and you can use this in the dip as well.

Dried Beef

You can also use Dried Beef in this recipe. I would rinse and pat dry the dried beef before using it, otherwise it has the potential to make this dip very salty.

Thicker Or Thinner

The measurements I use make a slightly thinner dip. I prefer this dip to be thinner in consistency, but you can adjust the measurements of cream cheese and sour cream to make it the texture you prefer.

If you like a thicker dip, use more cream cheese and less sour cream. If you like a thinner dip, use the sour cream and cream cheese ratios I have in the recipe.

Brown Sugar and Worcestershire Sauce

Combining Worcestershire Sauce and brown sugar really gives this dip a great salty and sweet flavor. I love this combination with the addition of the barbecue meat.

This recipe provides a perfect balance of flavor.

Worcestershire Powder

You may notice I use an ingredient in this recipe called Worcestershire Powder. This is a newer to me ingredient I have been trying out in a few recipes.

I am a big fan of the flavor of Worcestershire Sauce but in some instances with cooking, I do not want the excess liquid of the sauce.

I works really well in my Mediterranean Inspired Hamburger Pitas with Peppers and Onions because it sort of bound the meat together slightly, making a bit of a gravy which tasted delicious.

Burnt Ends Dip

Ingredients

  • 8 ounce package of cream cheese
  • 1 cup of sour cream
  • *for a thicker dip you can use 12 ounces of cream cheese
  • 3 cups of Burnt Ends *there is a paragraph in the post about the brand I purchased from Costco. There is an alternative for this ingredient outlined in the paragraph.
  • 6 green onions
  • 1/2 tablespoon of garlic powder
  • 1/2 tablespoon of onion powder
  • 2 tablespoons of Montreal Steak Seasoning *you can use less, add a little at time and taste and add more
  • 1/2 tablespoon of dried parsley
  • 1 teaspoon of dry mustard
  • 2 tablespoons of brown sugar *adjust to preference
  • 1 tablespoon of Worcestershire sauce *or 1/2 tablespoon of Worcestershire powder + 1 tablespoon of water
  • *all unique products are pictured in the post with links

Instructions

  1. In a small bowl combine the Worcestershire sauce and the brown sugar and whisk until combined and let this sit to the side.
  2. In a stand mixer or with a hand mixer add your cream cheese to a bowl and whip on high until light and fluffy.
  3. In a separate bowl, add your onion powder, garlic powder, dry mustard, Montreal steak seasoning, dry parsley and sour cream and stir until well combined.
  4. Slowly add the sour cream mixture to the cream cheese mixture and beat on medium to high speed to combine.
  5. Then add your Worcestershire sauce/ brown sugar mixture continuing to beat on medium to high speed.
  6. Slice your green onions both the white and green parts and fold into the dip.
  7. I use a burnt ends package from Costco, sauté them in a pan until the ends are crispy and then let cool. Chop into small, bite sized pieces and then add to the dip. You can add as many as you like. *if you cannot find burnt ends, you can use bbq pork, or the dried beef in the jar. Rinse the dried beef if using and pat dry, as it is very salty. You can also adjust the salt in the dip to make sure this is not as salty. *see post for more information
  8. When the dip is well combined, let this hang out in the fridge for a minimum of 4 hours or overnight.
  9. Before serving, give it a good stir and then serve with tortilla chips or crackers. I add some more green onions to the top before serving.
