Every bite of Instant Pot Spanish Rice offers such great flavors and textures. Tender grains of rice are infused with the robust essence of diced tomatoes and mild green chilies, creating a comforting base.

It features one of my favorite ingredients, the Mexican seasoning Sazon which, along with savory chicken bouillon, adds depth of flavor. Meanwhile the sweetness of sautéed carrots and onions, softened to perfection in butter, provides a delightful contrast.

The rice, perfectly cooked under pressure, absorbs all the flavors harmoniously, ensuring each spoonful delivers a satisfying experience.

Whether enjoyed as a comforting side dish or a flavorful main course, this rice promises to satisfy your palate and leave you craving more. You can add chicken or shrimp to make it a complete meal.

Sazon Seasoning

I have been using the Goya Sazon Seasoning for decades. I can get it at most any grocery store, Walmart, or on Amazon.This seasoning is in my Steak Taco Marinade in case you want THE BEST Steak Tacos.

If you wonder what Sazon tastes like, it has coriander, garlic, cumin and annatto. This small packet of Sazón GOYA with Coriander & Annatto makes your dish more delicious by quickly adding an appealing flavor and vibrant color.

A lot of people love use it to make their dish more colorful and flavorful.

Canned Tomatoes

These canned tomatoes add great flavor and color to this rice as well. I do not drain these tomatoes as the juice helps cook the rice with more flavor.

I have used many brands of diced tomatoes with green chilis and have not noticed a difference in flavor. Feel free to use any brand you like.

These are not spicy per se, but do add flavor.

Chicken Bouillon

I use this powdered bouillon in this recipe to add flavor. If you want less salt, you can add less.

I also use this bouillon for my World’s Best Stuffing. I think it adds great flavor.

Make Ahead And Save Time

I love making this recipe ahead of time and then reheating it the next day.

This rice comes out with an almost risotto-like texture. It is slightly creamy and very delicious.

Instant Pot Spanish Rice Recipe

Instant Pot Spanish Rice Recipe

This Instant Pot Rice is so easy to make but tastes like you're sitting on the Mediterranean coast.

Ingredients

  • 1 medium sized Yellow Onion
  • 2 Carrots
  • 2 packets of Sazon *see the post for links and clarification
  • 2 heaping tablespoons of Chicken Bouillon
  • 3.5 cups of Water
  • 1 14.5 ounce can of Diced Tomatoes with Green Chilis
  • 2 cups of White Rice
  • 3 tablespoons of Butter

Instructions

  1. Finely dice the onion and peel and dice the carrot.
  2. Set your instant pot to the sauté setting, add the butter, then the carrot and onion. Sauté for 15 minutes or until the onion and carrot are soft.
  3. Rinse your rice really well and drain it. Add it to the onions and carrots and let it get very lightly browned.
  4. Sprinkle with the bouillon and Sazon and then add the water and the can of diced tomatoes.
  5. Set the rice setting on the pot to 12 minutes. When it is finished let the pot sit for 18 to 20 minutes letting the steam release on its own. Then release the rest.
  6. Fluff the rice with a fork.
