These Air-FriedSweet Potatoes with Magic Butter have the perfect balance of crispy, caramelized skin and soft, melt-in-your-mouth insides. Brushed with a touch of maple syrup before air frying, the skins develop a delicate crunch with a hint of sweetness.
But the real star? The “Magic Butter,” a rich, flavorful delight I created made from a blend of butter, tangy buttermilk powder, aromatic dill, savory garlic salt, and a crack of black pepper. As the warm potatoes are split open, the butter melts into every fluffy bite, infusing them with an irresistible depth of flavor.
It’s a simple yet indulgent side dish or meal, perfect for any occasion.
The Tipsy Truth Comes Out
The truth is, I usually DESPISE sweet potatoes. I find everything about them awful.
I think this comes from when my parents sent me to a really nice day care on 63rd and Pulaski in Chicago called The Learning Circle. The Grandpa who owned it with his family was a chef and he would make us VERY fancy lunches.
I didn’t appreciate his food then as much as I probably would now. He used to make sweet potatoes a lot, probably because they were good for us and he cared, but I would NEVER eat them.
In the 1970s things were different, so I was made to sit at the table until I ate enough of them to be excused to nap. I know now this would be frowned upon, but back then this is how things worked.
Since the potato trauma of the 1970s that I endured, I have stayed away from sweet potatoes. On the other hand, Mister Tipsy LOVES sweet potatoes, so I started making these Air Fried Sweet Potatoes with Magic Butter.
He loves them and I have to say that the few times a year I make these, I really enjoy them! The skin is crispy and flavorful, so many flavors are infused in them and the butter is phenomenal.
This goes to show that even a tater hater can enjoy these!

There Is Not Much To Say
There is not much to this recipe. These potatoes are very easy to cook.
My recipe card below has the directions for the air fryer, but you can also adapt them to your oven. You can make as many or as little as you like.
The recipe as written makes enough butter for about four potatoes. I usually make a double batch of the butter anyway since I like to keep it on hand.
Just make sure you wash and let your potatoes dry before brushing them with butter and baking them,

Hiding In Plain Sight
I know that everyone is going to lose their minds over the buttermilk powder. Truth be told buttermilk powder has been in your baking aisle at your grocery store your whole life.
I use this buttermilk powder to make my Famous French Quarter Dressing and in many other recipes. If for some reason you do not see it in the baking aisle of your store, Amazon has many options.

Soy Sauce and Syrup?
Yes soy sauce, butter, and syrup to brush on the skins of these potatoes before you bake or air fry them. This will infuse a great flavor and give the skins a pretty caramelized color.
You can skip this step if you want to but it makes the skins taste so good. Reminder that if you eat the skins, these potatoes are very “cleansing.”

Jazz It Up With Marshmallows
If you want to make these even more decadent, you can add some mini marshmallows on top of the butter when you finish air frying these for the two minutes.
I like them just with the butter, but once in awhile I will add the marshmallow for Mister Tipsy’s happiness.
Air Fried Sweet Potatoes with Magic Butter Recipe

These crispy air fried sweet potatoes have skin so delicious, you'd eat it even without the health benefits. The tender insides with melting magic butter are what dreams are made of.
Ingredients
- 4 to 6 small to medium sized sweet potatoes
- 8 tablespoons of butter plus one tablespoon of butter
- 1 tablespoon of maple syrup, try to use the good kind
- 2 teaspoons of buttermilk powder *info in post
- 1 tablespoon of dried dill
- 1/2 tablespoon of garlic salt *or to taste
- 1 teaspoon of black pepper *or to taste
- Pinch of chili powder
- 1 teaspoon of brown sugar
- 1 teaspoon of soy sauce
Instructions
- Wash and thoroughly dry your sweet potatoes and poke just a few holes in the potato on all sides. Set aside for a couple of minutes.
- Preheat your air fryer at 375 degrees for about 5 to 7 minutes. All air fryers temp different so adjust accordingly.
- Melt the one tablespoon of butter and add the teaspoon of soy sauce and then maple syrup and brush the potato skins all over with this mixture. Add the potatoes to the air fryer and air fry for 35 minutes, or until the skin is crispy and the inside is soft. Halfway through cooking, I brush the potatoes again with the syrup and soy sauce mixture.
- While the potatoes air fry, soften the rest of your butter on the counter or in the microwave. You do not want it melted, you want it intact but soft.
- Mix in the dill, garlic salt, buttermilk powder, chili powder and black pepper with the softened butter to make the Magic Butter.
- When the potatoes are done cooking, carefully split them lengthwise and use a fork to loosen up the insides, add a hefty spoonful of Magic Butter to each one and air fry for two more minutes. If you have Magic Butter left, top with it before serving.
- **If you like you can also add a few mini marshmallows on top of the butter when you air fry for the two extra minutes.
*these can also be baked in the oven and topped with the same butter.
