I originally saw a picture on one of the social media apps of a very similar looking salad and then could not remember where I saw it, so I decided to make my own!
I really like the ease of this salad. It would be great with some grilled or baked chicken. I think the next time I make this I will make my Juiciest Baked Chicken Breasts to serve alongside it.
Heading Into Summer
I know that this Chilled Greek Bean Salad with Feta will be the perfect summer salad but it is also a really great salad for meal prep if you are the type of person that takes lunch to work. I love cottage cheese and I was thinking this would also be a great salad to have with some cottage cheese.

Easy To Make
I know that this is not really a “recipe” in the sense that it doesn’t take a lot of steps and cooking methods to make it. Still I do like always having a written version of my favorite recipes, even the easy ones.
You will see that this recipe does not require a lot of ingredients, which makes it budget friendly as well.

The Dressing
One of the ingredients listed is this Garlic Expressions Dressing. I am a huge fan of this dressing.
It is pricey, but so delicious. I use this to make my Pizza Salad too!
I see this dressing in almost every store I shop at. Costco sometimes has a three pack as well.
If you cannot find it in store you have two options.
One, Amazon sells it.
Two, you can use the Aldi variety which is basically the same dressing. It is in the dressing aisle and you will see garlic cloves in the bottom of the dressing.

Season The Veggies First
Reminder to season the veggies first and let them sit. This is cause the vegetables will MACERATE and make their own juices.
This will affect how much dressing you add to the final salad, so be sure to let this sit and adjust the dressing amount when you mix it all up.


Chilled Greek Bean Salad with Feta Recipe

Light and tasty with protein and vitamins, Chilled Greek Bean Salad is perfect as a side or a light meal on its own.
Ingredients
- 2 sixteen ounce cans of chickpeas (garbanzo beans)
- 1 larger size, seedless cucumber
- 1 medium sized red onion
- 4 green onions
- 1/2 tablespoon of lemon pepper
- 1/2 tablespoon of dried dill
- pinch of coarse salt
- pinch of black pepper
- 1 to 2 teaspoons of celery seed (taste and add)
- 1/2 cup (or to taste) of a garlic vinaigrette *I use Garlic Expressions (pictured in post)
- 1/2 cup (or to taste) feta cheese
Instructions
- Wash but do not peel the seedless cucumber, dice into small pieces. Peel and dice your red onion, a very small dice is best. Slice both the white and green parts of the green onions. Toss all the vegetables together in a large bowl.
- Drain and rinse your chickpeas really well. Set them aside to drain and dry
- To the bowl add your lemon, pepper, dill, salt, black pepper, and celery seed. Mix well and let sit out on the counter for about 15 to 20 minutes. This will allow the veggies to marinate a bit and create their own juices. This will make a difference of how much dressing you need to add. Taste this after it sits and adjust any seasoning you wish. Then add the chickpeas and toss to combine.
- Add the dressing a little at a time. As this sits it will create more "juice" so don't add too much dressing, you want everything coated but not soaking in dressing. Chill in the fridge 6 hours or overnight. You can add more dressing when serving. Top with the feta cheese when ready to serve.
- This keeps for a couple days in the fridge.
