Pork Chop Potatoes are the perfect side dish to any pork chop recipe, as they’re perfectly fried with butter, salt, pepper, and chives. These taters fry up crispy, soft, and golden brown and they also make a great breakfast potato.
This recipe uses canned potatoes. I know some people will have a problem with this but rest assured, you have been eating canned potatoes forever in restaurants, you just did not know it.
Canned, sliced potatoes are already tender so it cuts down on cook time. They also get VERY crispy and golden and they absorb the simple flavors of the butter, salt, and pepper.

The Can
I usually buy whatever canned potatoes are on sale. I recently shopped at my local store, Shop and Save, and this was the brand of potatoes they had on sale so I bought a bunch of cans.
A lot of people love the Del Monte Brand of canned potatoes. I truly find that most of the store brand potatoes taste the same as the Del Monte.
I suspect they are “white labeling” which means Del Monte may can them for the stores and just put the store label on them. I do not know if this is a fact, it is just what I assume.
This is how a lot of off label products work believe it or not.

Drain and Dry
You want to make sure to drain the canned potatoes really well. I also pat them dry with a paper towel.
Do this carefully so that you do not break up the potatoes. You will want these to be dry as possible so they fry up really well.
I use a mesh strainer and then lay them out or pat them with paper towels before adding them to the fry pan.

Have Patience
You will need to give these taters a chance to caramelize in the pan. Keep an eye on the heat but let them fry up properly.
These will have the best flavor. This is how we made the best home fries at a restaurant/diner I used to be a waitress at.
Canned potatoes work so much better cause they are soaked in the can and do not have that starchy layer on them.
Pork Chop Potatoes Recipe

Pork Chop Potatoes are the perfect fried potato for pork chops. Made with canned potatoes that fry up to perfection. Butter, salt, pepper, and chives are the only ingredients needed to make the perfect potato side.
Ingredients
- 2 cans of Sliced Potatoes (15 ounces each)
- 3 tablespoons of Butter
- 1 medium sized Yellow Onion
- 2 teaspoons of Salt *or to taste
- 2 teaspoons of Black Pepper *or to taste
- 1 tablespoon of Chives *or to taste
Instructions
- Drain the canned potatoes really well in a strainer. Pat them dry with paper towels.
- Peel and slice the onion into strips.
- Add the butter to a skillet and add the onions, sauté for 10 to 12 minutes or until soft and golden brown.
- Add the potatoes and toss them in the onions and butter for a minute or two, then spread them evenly across the pan and let them fry. This takes a few minutes, so give them a toss from time to time, but spread them out again after. Keep the heat at medium for this process.
- Fry them for about 15 minutes at the medium heat. When you see them getting a golden color, heavily salt and pepper them. Potatoes need a lot of seasoning.
- In the last ten minutes of cooking, turn up the heat to get that char on the potatoes, tossing them with a spatula so they do not burn. Spread them out each time so they are as flat as possible on the cooking surface of the pan.
- When they are the level of fried that you prefer, add the sliced chives and serve with cracked black pepper on top.
