This Wedge Salad is a copycat version of the one served at Disney’s Steakhouse 71 restaurant in the Contemporary Resort. The blue cheese dressing is made with a mix that can be found on Amazon and it also has crispy bacon, marinated onions, tomatoes, and hard boiled egg for a delicious salad that is a meal in itself.
I go to Steakhouse 71 in Disney’s Contemporary Resort almost every time I go to Disney World. The reason I go is for this salad.
It is one of the best salads I have ever had. This Copycat Steakhouse 71 Wedge Salad is a meal in itself. It does have two ingredients that should be prepped ahead of time, but these are easy to prep and will take the salad to the next level.
You are going to love the marinated onions. The onions can be used on anything and are even delicious on their own.

My friend kept talking last week about a hot dog with kraut and onions. I knew when I got home I needed to make my German Style Hot Dogs and these marinated onions and serve them together.
You will make these onions for the salad and then you can make that delicious hot dog dinner. I love a good hot dog meal lol!
The onions are super simple to throw together. You want to make sure all the onions are submerged in the vinegar.
Reminder that you do not need to add salt to these onions since the seasoned rice vinegar has sodium.

Everyone’s Favorite Uncle
Well, Tipsy is at it again… making you buy more magical powders from Amazon. These little packets are wonderful for making blue cheese dressing.

I do feel like you need to add crumbled blue cheese to it. I also make the packets differently than the directions on the packet state, so pay attention to the steps in the recipe card, not on Uncle Dan’s packet.
You can also just use your favorite blue cheese dressing for this salad, but I would still add the extra blue cheese crumble.
I do recommend trying this dressing mix at some point, regardless. The dressing is drinkable and just reminds me so much of Steakhouse 71.



Copycat Steakhouse 71 Wedge Salad

This wedge salad is a copycat version of the one served at Disney's Steakhouse 71 restaurant in the Contemporary Resort. It is made with a semi homemade blue cheese dressing, crispy bacon, marinated onions, tomatoes and hard boiled egg. It is a delicious salad that is a meal in itself.
Ingredients
- 3 or 4 heads of baby Bibb lettuce (Boston Lettuce)
- 1 lb of thick cut bacon
- 1 large red onion
- 1 to 2 cups of seasoned rice vinegar
- 1 tablespoon of white sugar
- 1/2 tablespoon of dried Italian herbs
- 6 hardboiled eggs
- 10 to 12 grape or cherry tomatoes
- handful of fresh chives
- coarse salt and cracked black pepper
- 2 packets of Uncle Dan's Blue Cheese Dressing Mix *linked and pictured in the post before the recipe card
- 1 1/2 cups of milk
- 2 tablespoons of white wine vinegar
- 1/4 cup of sour cream or Mexican Crema
- 1 1/2 cups of mayonnaise
- 5 to 6 ounces of your favorite blue cheese
- *you can also use your favorite blue cheese dressing and omit the ingredients from the 2 packets of Uncle Dan's down to the mayonnaise. Still use the blue cheese.
Instructions
- Really wash and drain the lettuce, I dunk this lettuce in a bowl of cold water several times and then let it drain upside down on towels in the fridge to keep it crisp.
- You will need to make the onions at least a few hours ahead of time but overnight is best. To make the onions, slice the whole onion very thin and add them to a bowl with a lid. I prefer to use a glass bowl. Season the onions with the dried Italian herbs and the sugar. Toss well to coat. Add the seasoned rice vinegar. The onions should be completely submerged but not floating. The onions will soften as they marinate and submerge even more. Let this sit out on the counter covered for a few hours, then cover and keep in the fridge overnight. *I have made these and they last a couple of weeks in the fridge in a air tight container.
- Make the hardboiled eggs using whatever method you prefer. Cool and peel them. Cut them in half and separate the yolks from the whites. Finely dice the whites and keep them in a container separate from the yolks. Also, finely dice the yolks.
- Cut the bacon into 1/2 inch pieces and cook in a skillet until crispy. Remove and drain on paper towels.
- To make the dressing add the mayo, milk and sour cream to a bowl and whisk in the two packets of blue cheese mix. Add the vinegar and whisk in. Crumble the blue cheese and add this into the dressing. You can use this right away but it does get better as it sits. If you have time, make it the night before.
- Slice the tomatoes in half lengthwise and season with coarse salt and black pepper.
- When it is time to serve the salad, cut the lettuce in half and add a wedge to a plate. Do not use the stem part. Cut that off. Drizzle the lettuce with the blue cheese dressing. Make sure to get blue cheese into the folds of the lettuce.
- Add the crumbled bacon to the top of the lettuce and then some of both the white and yolks of the eggs. About a tablespoon.
- Add a few of the tomatoes to the plate. Then add the marinated onions all over.
- Cracked black pepper over the whole top and top with the cliced chives. *You can also add thinly sliced radish but I do not prefer radish on this salad.
