These Double Decker Cheesy Chicken Tacos are the ultimate comfort food featuring tender, seasoned chicken layered with refried beans, melty cheese, and soft tortillas for the perfect double bite. Baked until toasty, bubbly, and golden brown, each taco comes out warm and gooey with a mega cheesy pull perfect for weeknight dinners, game days, or anytime you’re craving something hearty and fun.

My Mom was coming over for my birthday and I always crave tacos on my birthday. I had a taste for crunchy and soft tacos so I decided to make a copycat version of a Taco bell favorite.

These sound like a lot of work but they are not really that hard to make. The trick is to set yourself up with a proper taco building station and you will fly through the process.

This is a fun dinner to make and everyone can choose their own taco toppings. This is also a great recipe to make when you are feeding adults and kids plus the tacos reheat pretty well in the air fryer or oven too!

The bean dip I use is this brand from Fritos. If you are in the grocery store, you find this in the chip aisle.

This is the same bean dip I use in my Taco Dip. The reason I use it is for the creamy, spreadable texture.

This does cost a little more but trust me, the flavors are worth it. This is part of the wonderful texture of these Double Decker Cheesy Chicken Tacos.

With a plan for the assembly of these tacos it will only take about ten minutes. Have a little work space and you will see that this step speeds by.

These do not have to look perfect, especially the first time you make them. Give yourself some grace.

Double decker cheesy chicken tacos

Double Decker Cheesy Chicken Tacos, a dinner the whole family will love. Juicy chicken simmered with lots of flavor layered with cheese, beans, and both crunchy and soft tortillas. These bake up gooey and delicious. Customize these with your favorite taco toppings.

Ingredients

  • 1 to 2 lbs of chicken breast, cubed
  • 2 packets of chicken taco seasoning mix *I prefer Lawry's brand **pictured in the post before the recipe card
  • 3/4 cup of water *add a little more if needed
  • 1 can of diced tomato with chili (10 ounces)
  • 1 small yellow onion, minced
  • 8 to 10 flour tortillas
  • 8 to 10 crunchy taco shells
  • 2 cans of Fritos bean dip, 9 ounces each
  • 4 cups of shredded cheddar cheese
  • lettuce, tomato, onion, salsa, sour cream and guacamole *optional
  • 2 tablespoons of oil

Instructions

  • Cut up the chicken into small, bite sized pieces. Pat dry with paper towel, add to a bowl, add 1/2 tablespoon of cooking oil of your choice to the chicken. Add the chicken taco seasoning packets to the chicken and toss to coat well.
  • Add the remaining oil to a large skillet, get the skillet hot but not smoking. Add the chicken and cook 10 to 12 minutes until the chicken is golden brown and nearly cooked through. Add the water and the can of diced tomatoes. Do not drain the tomatoes.
  • Bring this to a simmer, simmer uncovered 15 to 20 minutes or until most of the liquid is evaporated.
  • Heat your oven to 375°
  • Shred the cheese yourself if possible. I like to use a sharp cheddar but any cheese you prefer will do.
  • Set up an assembly station with the 2 cans of beans, the soft tortillas and the crunch taco shells and the cheese.
  • This makes 8 to 10 tacos depending on how much chicken you add. Spread out 8 to 10 soft tortillas, spread the whole tortilla with the beans in an even layer. This should not be too thick but you need enough to get the crunch taco shell to stick.
  • Sprinkle a tiny bit of the shredded cheese over the beans.
  • Place the hard taco shells in the center of the bean spread tortillas, add a decent amount of shredded cheese to each crunchy shell, then add as much chicken as you prefer. Top with more shredded cheese.
  • Fold the soft tortilla up the sides of the crunchy taco shells.
  • Add the tacos to a baking dish, using the tacos to brace themselves up. Top them all with more cheese. I save some of the cheese to add as the toppings after baking. You can use it all if you like.
  • Cover with a piece of foil, bake for 15 minutes. Uncover and bake 10 more minutes until the cheese is golden brown and bubbly.
  • Serve with all of the toppings and each person can choose their own.
