Both versions are delicious, so it really comes down to personal preference. If you’re after that nostalgic bakery-style birthday cake taste, I recommend sticking with the white cake mix, especially when paired with the optional butter and almond extracts.

After melting the butter, let it cool for about 5 to 10 minutes before adding it to the eggs. If the butter is too hot, it can begin to cook the eggs. Because this cookie dough is made with cake mix and melted butter, it starts out quite soft and sticky. Refrigerating the dough for at least 30 minutes helps firm it up, making it much easier to scoop, press into the sprinkles, and flatten before baking. Chilling the dough also helps the cookies hold their shape in the oven, giving you thicker, softer cookies with beautifully defined sprinkle tops.

You will struggle a little with the sticky dough on your hands. It is ok. These cookies are worth the trouble. If they are not perfectly shaped when put on the pan and flattened, do not worry. You will make the shape round and perfect when you put the glass over them and spin them inside the glass.

Chill the Cookies on the Baking Sheet for Easy Prep

If you’d rather not scoop and shape the cookies after chilling the dough, you can prepare them first and let the baking sheet do the work. Scoop the cookie dough onto your parchment-lined baking sheet, press the tops into the rainbow sprinkles, and flatten each cookie with the bottom of a glass. Then place the entire baking sheet in the refrigerator for at least 30 minutes before baking. This method makes the dough easier to handle, helps the cookies keep their shape, and is a great option if you want to prep them ahead of time and simply pop the pan into the oven when you’re ready to bake.

Topped with colorful rainbow sprinkles, they're an easy, festive treat that's perfect for birthdays, celebrations, or whenever you're craving a bakery-style cookie.

Ingredients

  • 1 (15.25 ounce) box white or French vanilla cake mix
  • 2 large eggs
  • 1/2 cup butter, melted and cooled for 5 to 10 minutes
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 to 2 teaspoons butter extract (optional, but highly recommended)
  • 1 to 1 1/2 cups rainbow nonpareils

Instructions

  1. Preheat your oven to 350 degrees. Line two baking sheets with parchment paper.
  2. In a large mixing bowl, combine the cake mix, melted butter, vanilla extract, almond extract (if using), and butter extract (if using). Let the melted butter cool for about 5 to 10 minutes before adding the eggs. Add the eggs and mix until a thick, sticky dough forms. Chill the dough for 30 minutes before working with it.
  3. Pour the rainbow sprinkles onto a dinner plate or shallow bowl. *the ones I used are linked in the post
  4. Using a small cookie scoop (about a 2-tablespoon scoop), scoop the sticky dough directly onto the sprinkles. Press only one side of each dough ball into the sprinkles so the top is generously coated.
  5. Place each cookie, sprinkle side up, onto the prepared baking sheet, leaving about 2 inches between cookies.
  6. Using the bottom of a drinking glass, gently flatten each cookie into an even(ish) disc. This helps the cookies bake evenly while keeping all of the sprinkles on top. You can also press more sprinkles into the cookies before pressing them down with the glass. I added a teaspoon or two to the top and then pressed.
  7. Bake for 10 to 12 minutes, or until the edges are set and the centers still look slightly under-baked. Do not overbake. The cookies will continue to set as they cool.
  8. As soon as the cookies come out of the oven, place a drinking glass over one warm cookie at a time. Gently move the glass in a small circular motion around the cookie to shape it into a perfect circle. This simple bakery trick gives the cookies a beautiful, professional look.
  9. Allow the cookies to cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.
