I used 2 lbs skirt steak and I have the butcher trim and put through the tenderizer a few times so it’s almost falling apart then I season both sides with Goya adobo, marinate minimum 6 hours up to 24.
The marinade is:
- 1 bottle of Clamato picante
- 1 beer
- 1 white onion , sliced
- 2 limes
- 2 cloves of garlic
You can sub spicy v8 for Clamato.
This recipe works best when you are grilling the meat, but if you have to make inside in the broiler or grill pan, dab off the marinade from the meat with paper towels before searing off.
