Bacon Bbq Potato Chip Nachos

A fun appetizer for game day.

Who is ready for some football? Frankly I could care less about watching anything to do with sports but I do love football season for the food. Mister Tipsy loves to sit around on Sunday and watch his games and snack. This works out because I love to feed him. I was thinking of something different to make for game day and I foraged for ingredients in my pantry and fridge and came up with these fantastic Bacon Bbq Potato Chip Nachos. I have to warn you, they are super addicting. Since I have made these Bacon Bbq Potato Chip Nachos, Mister tipsy has asked me to make them three more times. These are definitely going to be a game day hit at your house. All you need to make the Bacon Bbq Potato Chip Nachos is the following:

  • 1 bag of Bbq Potato Chip, I like the thin and crispy style
  • 1.5 C of Sharp Cheddar Cheese
  • 1/4 C of your favorite Bbq Sauce
  • 3 Green Onions sliced thinly
  • 1 C of cooked and crumbled bacon, you can even use bacon bits if you want to save a step.
  • 1/2 C of crumbled Goat Cheese
  • 1 C of Ranch or Blue Cheese Dressing

I had purchased the thin bbq potato chips from Aldi that are super light and airy. I used up the bag making these three times. The next I make these Bacon Bbq Potato Chip Nachos I am going to try those chips that are super crunchy and a little bit thicker. I do like these thin chips for this appetizer, I just want to try something different the next time.

I made these Bacon Bbq Potato Chip Nachos right on the tray for my toaster oven and served them this way too. I was making a small amount for the two of us. If you want to make a bigger batch you will need to increase the quantity of the ingredients and use a cookie sheet in the oven. The steps to making these Bacon Bbq Potato Chip Nachos are quite simple.

  1. Cover your baking tray with foil and spray with a non stick spray.
  2. Spread your potato chips on the tray, I didn’t spread mine out they were kind of overlapping each other. I used my toaster oven baking sheet and used about three handfuls of chips.
  3. Take your bbq sauce and drizzle some of it over all the chips.
  4. Next, top your chips with the cheddar cheese and then the bacon.
  5. Drizzle a little more of the bbq sauce across the cheddar cheese and the bacon.
  6. I then bake the chips for about 15 minutes at 375 degrees or until your cheese is melted and your bacon is sizzling.
  7. While the chips bake, I take my blue cheese and/or ranch dressing and I mix it with about a tablespoon or two of the bbq sauce and stir in some of the green onions. I set this aside for dipping.
  8. When the chips have the cheese melted on top, remove from the oven , drizzle with the remainder of the bbq sauce, top with the goat cheese crumbles and the green onions.
  9. Serve and enjoy!

Mix your ranch or blue cheese dressing with some bbq sauce for added tang

This appetizer was so delicious. I like it because it is quick and easy, the bacon adds such a great flavor and I love the sweetness of the bbq sauce. I personally love to use Open Pit Bbq Sauce but you can use any sauce you love. I also love the goat cheese crumbles but you can substitute blue cheese if you prefer.

I think that you will love this recipe as much as we do and that it will become a game day staple in your house for football season!
