The Side That Tastes Like Fall

This recipe may be for the Ultimate Sweet Potato Casserole, but it’s so simple that anyone can make it. Sweet potatoes are an icon of the Thanksgiving and Holiday season, but are you ready for a bombshell?

I have to come clean and say that up until now I did not like sweet potatoes. GASP!

Something about the way they look, their texture, and their flavor used to really weird me out. I’ve tried to enjoy them many different ways and it has always been a no go for me.

Recently I was sent a bunch of sweet potatoes from my weekly produce delivery service and I needed to figure out what to do with them. Mister Tipsy, on the other hand, loves sweet potatoes so he was excited for me to create a recipe for him to enjoy.

When I perused my pantry to see what I had on hand, the idea of The Ultimate Sweet Potato Casserole was born.

Gather Your Ingredients

You do not need a ton of ingredients to make this recipe. A lot of the ingredients are ones you probably have on hand. The exact measurements are in the recipe card below

What you will need to make this recipe is:

  • About 4 to 6 cups of diced sweet potatoes (this depends on how much you want to make)
  • 2 Eggs
  • Brown Sugar
  • Salt
  • Heavy Whipping Cream
  • Butter
  • Maple Syrup

You will also need a casserole dish, like the size you use for brownies, and some non-stick spray. You will also need a bowl and fork to whisk the eggs and cream plus a rubber spatula, a pot, and a potato masher.

How To Make The Ultimate Sweet Potato Casserole

Making The Ultimate Sweet Potato Casserole is surprisingly easy. You do not need to have any special cooking skills or equipment.

Basically all you have to do is boil some potatoes, mash them, mix a bunch of stuff, and bake!

Here is what you need to do to make the ultimate sweet potato casserole.

  1. Peel and chop up your sweet potatoes. I used about 8 small sweet potatoes. You want to have about 4 to 6 cups of potatoes.
  2. When the sweet potatoes are cooked, drain them well and add half the stick of butter to the sweet potatoes.
  3. Let the butter melt in a little bit then use your potato masher to mash them up until they have no lumps.
  4. Sprinkle the potatoes with your salt and brown sugar and fold that in, then add your maple syrup.
  5. In a separate bowl, whisk your eggs and heavy cream and fold that into the sweet potatoes.
  6. Spray or grease your casserole dish, add the sweet potato mixture, and dot the top with the rest of the butter.
  7. Bake at 375 degrees for about 35 to 35 minutes (every oven cooks differently). You will know this is done when the top is golden brown and the whole casserole has risen throughout the dish.

I used very small sweet potatoes but you will just need to have about 4 to 6 cups of diced potatoes in your pot.

After you drain your sweet potatoes well, add the butter and let it melt into your sweet potatoes a bit before mashing.

Add your brown sugar, maple syrup and salt and fold into the sweet potatoes. You can do this before or after you mash them.

Time To Enjoy The Ultimate Sweet Potato Casserole

You can see how simple this recipe is to make. It makes a great side dish, a great dish to bring to a pot luck, and goes great with lots of other main dishes.

The Ultimate Sweet Potato Casserole

The ultimate sweet potato casserole with whipped cream, butter, brown sugar and maple syrup. This dish will be the star of your holiday meal and makes a perfect week night side dish.

Ingredients

  • 4 to 6 Cups of Peeled, Chunked, Sweet Potatoes
  • 1/3 C of Heavy Whipping Cream
  • 2 Eggs
  • 2 teaspoons of sea salt
  • 1 Stick of Butter
  • 2 T of Maple Syrup
  • 1/4 C of Brown Sugar

Instructions

  1. Peel and rough chop your sweet potatoes and boil in a pot until they are soft. This should take about 15 minutes after the water comes to a boil.
  2. Drain the sweet potatoes and add 3/4 of the stick of butter while the potatoes are hot. Mash well with a hand potato masher.
  3. Once you have mashed the sweet potatoes, sprinkle in the brown sugar and salt. Fold in. The fold in the maple syrup.
  4. In a separate bowl, whip the two eggs with the heavy whipping cream and fold into the sweet potato mixture with a rubber spatula.
  5. I use a 11.25 oval Le Crueset to bake these but you can use a smaller casserole like one you would use for brownies.
  6. Spray or butter your cassrole dish and add the sweet potatoes and dot the top with the remaining butter.
  7. Heat oven to 375 degrees, bake uncovered for 35 to 45 minutes. Every oven is different so you will know its done when its golden brown on top.
