Red Potatoes
The red potatoes in this recipe are perfect. They roast up tender and buttery but do not fall apart.
The recipe describes these as “fork tender” which means they hold together and do not fall apart but are soft when you pierce them with a fork. I always use the medium to large sized red potatoes.
Make sure you cut them into somewhat even, bite sized chunks.


The Sauce Is Simple
The sauce you make for these potatoes is simple. It’s just olive oil, mustard, garlic, and some seasonings yet this sauce bakes up on the potatoes so caramelized and delicious.
I also add a sprinkle of salt and pepper to the top of the potatoes as you can never have too much flavor when it comes to potatoes.

Ingredients
- 5 tablespoons of Gray Poupon Dijon Mustard
- 2 tablespoons of olive oil
- 1 clove of garlic, finely diced
- 1/2 teaspoon of dried Italian seasoning
- 6 medium red skin potatoes, skin on, cut into chunks
- Salt and Pepper To Taste
Instructions
- Combine the olive oil, garlic, mustard and Italian seasoning in a bowl and stir well to combine.
- Wash and do not peel your potatoes and cut them into bite sized chunks.
- Spray a 13 x 9 inch casserole dish with non stick spray.
- Add the potatoes to the baking dish and pour the mustard mixture over the potatoes and toss well to coat. Make sure the potatoes are in an even layer.
- Heat your oven to 425 degrees, add your potatoes and bake 35 to 45 minutes. Toss once or twice while baking. Making sure to keep them in an even layer while baking.
- They are done when they are fork tender, but not falling apart, and slightly crispy on the edges.
