If you’re looking for a step by step guide to making the Ultimate Thanksgiving Leftovers Sandwich then you’ve come to the right place. My secret is is frying up the stuffing so it’s crispy under the savory turkey and gravy topping.

This is all served up on a toasted French roll with a cranberry spread and a layer of butter mashed potatoes.

There is a full, printable recipe at the end of this post but first I have written a few paragraphs that will show you the products and steps as I made them.

This recipe and most of my recipes are easily adjustable to your personal preferences and you should use my recipes as a guide to create your own sandwich inspiration.

Prep Ahead Of Time

You can make all the components of the Ultimate Thanksgiving Leftovers Sandwich and have them ready to assemble when you have a taste for a sandwich. I personally only like to use the white meat of the turkey but you can use a combo of the dark and white meat.

You can really use any bread you prefer, this is just one of my favorite brands so I thought I would share with you.

Crispy Stuffing Is Key

The crispy stuffing is key in this recipe. My Mom started reheating her homemade stuffing this way and I could not get over how good I knew this would be in a leftovers sandwich.

Your stuffing may not remain in patty form when you fry it up, but do not fret. You can scramble this stuffing and it will be just as good.

You just want to create crispy bits.

The Ultimate Thanksgiving Leftovers Sandwich Recipe

This sandwich will have you using up all the holiday dinner leftovers in a single delicious day.

Ingredients

  • 3 to 4 cups of leftover turkey cut into bite sized pieces
  • 1 packet of turkey gravy mix + the water amount listed on the package directions to make the gravy
  • 3 to 4 cups of leftover stuffing
  • 2 eggs
  • 3 tablespoons of heavy cream
  • 2 tablespoons of cranberry sauce
  • 1/2 cup of mayonnaise
  • 2 cups of leftover mashed potatoes
  • 1 cup of crispy french fried onions
  • 4 to 6 French rolls
  • 4 tablespoons of butter
  • Garlic Salt to taste
  • Black Pepper to taste

Instructions

  1. In a bowl add your leftover stuffing, whisk two eggs with the heavy cream and add to the stuffing. Add a sprinkle of garlic salt and black pepper. Mix well to combine. Set aside.
  2. In a large skillet, add a tiny bit of butter and sauté the leftover turkey. In a bowl combine the gravy mix with the water required to make it until the gravy is mostly dissolved. Add this to the skillet with the turkey, bring this to a simmer, and whisk until the gravy is thickened and smooth. Turn down heat just to keep warm.
  3. Split your French rolls and melt a tablespoon or two of the butter. Brush the rolls with the butter and place buttered side down on a baking sheet and place in the oven and bake at 375 degrees for 10 to 12 minutes, or until rolls are toasted. Keep and eye on these so you don't burn them.
  4. Combine the cranberry sauce with the mayonnaise. Mix until well combined and smooth.
  5. Warm your mashed potatoes. Keep warm.
  6. In another skillet, add some butter and place spoonfuls of the stuffing mix, and let crisp up in the butter. Form into patties. These patties may not stay together fully, it depends on your stuffing style, it is ok to just sauté the whole thing like a scramble. You just want crispy bits. If you are able to keep them in patty form, let crisp up on one side, flip, and let crisp up on the other side.
  7. To assemble your sandwiches, keep the lids of the buns on the baking sheet and spread a layer of mashed potatoes on the bottom side of the lid. Brush with melted butter, a sprinkle of garlic salt and black pepper and place back in oven to brown. Watch close so they don't burn. You can also broil but keep a VERY close eye.
  8. On the base of the bun, spread your cranberry mayonnaise, add your crispy stuffing, then top with the turkey gravy. Top with crispy french fried onions.
  9. When the potato topped bun lids are golden brown, top the sandwich with the bun. Cut and serve!
