A Hug In A Bowl

Buttered Noodles

Classic Buttered Noodles made with butter, cream, dill, and some peppery spices is a simple yet delicious easy dinner idea that everyone will love. This is perfect served with some smoked kielbasa thats been sautéed in a skillet.

My cousins are some of the pickiest eaters on the planet. I made this recipe to serve alongside my Party Polish Sausage recipe and my Simple Cucumber Salad and it was like I served them a five star feast.

This goes to show that sometimes simple is just best.

The Pasta Is Personal

I like to use a pasta for this recipe that can hold the buttery goodness in every crevice. My “go to” is Campanelle Pasta.

I love the texture of the edges of this pasta. The pasta is fluted and the center is hollow, which really holds all the delicious herby butter and cream.

Very Simple Ingredients

You will see that there are very few ingredients in this recipe. The trick is letting the pepper, herbs, and spices mellow out in the butter so that the flavor is super amplified when tossed with the pasta.

The white pepper is very earthy and, to me, gives the slightest hint of mushroom without there being any mushroom. I think you will really enjoy the flavors.

The addition of the nutmeg adds a nice sweet and spicy nutty flavor. This will really compliment the richness of the butter and cream and add some zip to the simpleness of the plain pasta.

You can add more or less of ANY of the seasonings and spices. I would suggest tasting the butter before adding the pasta so that you can adjust to your liking.

This is a picture of the same recipe, but a double portion I was making for a party.

A Salad Side

I make my Simple Cucumber Salad with this recipe along with the Polish sausage, as I said earlier in the post. The cucumbers add a nice sweet crunch to this meal and it also compliments the slight onion flavor in the noodles.

This whole meal is just simple and delicious.

Classic Buttered Noodles Recipe

Classic Buttered Noodles is a dinner that will feel like a big, warm hug. The tangy dill paired with cream and butter creates the perfect combination in every bite of pasta.

Ingredients

  • 1 sixteen ounce box of your favorite pasta *the type I use is pictured in the post
  • 2 sticks of salted butter (16 tablespoons)
  • 1 small onion, very finely diced (you can also grate this)
  • 1 stalk of celery grated (on a cheese grater, or VERY finely diced)
  • 1/4 cup of heavy cream
  • 1/2 tablespoon of dried dill
  • 1/2 teaspoon of ground nutmeg
  • 2 teaspoons of garlic salt *or to taste
  • 1/2 teaspoon of black pepper *or to taste
  • 1/2 teaspoon of white pepper

Instructions

  1. Start a large pot of water on the stove to boil your pasta.
  2. While the water gets ready to boil, melt 3 tablespoons of the butter in a large skillet. Add your onion and celery and sauté low and slow until both are very soft and translucent.
  3. Add the remaining butter to the skillet and let this melt. Be sure it is not sizzling, you just want to melt the butter.
  4. When the butter is melted, add the dill, black and white pepper, garlic salt, and dried nutmeg. Stir and let this sit for 15 minutes on the lowest heat setting so the herbs and spices bloom.
  5. Boil your pasta according to the package directions until it is al dente. Drain.
  6. Add the heavy cream to the butter and whisk until combined, then add your hot noodles. Toss to coat and serve immediately.
  7. I like to serve these with my Polish Sausage which is linked in the post.
