Thai Peanut Hummus

If Thai food is your thing than you’ll love this Thai Peanut Hummus featuring peanut butter, chickpeas, and soy sauce. I use this as a snack dip and also a base for a chicken wrap.

I am a Thai Peanut Noodle addict. It is something I order every time I get Thai food.

Once day I was craving peanut noodles and had a bunch of canned chickpeas to use at the time and I had a lightbulb moment. Why not make hummus with the same flavors as Thai Peanut Noodles?!

A genius idea was born. This recipe is quick to make and you will eat it even more quickly.

Why Are They Called Chick Peas?

I wasn’t sure why chickpeas are called peas when they are technically a bean. I Googled it and found out that the name is a French derivative of Latin word “cicer” meaning chickpea so… I guess chickpea means chickpea pea?

Either way, you will find these chickpeas in the bean aisle.

Peanut Butter In A Dip?

When you read the recipe card that is at the end of this post, you may need to clutch your pearls at the sight of the peanut butter that is in this hummus. Do not fret, this adds great flavor to the Thai Peanut Hummus.

You will be super pleased with how good it is, plus the peanut butter is a protein. In food world, nuts are often called “sweet meats.”

I love that endearing term. If you love a good PB and J sandwich, you are going to love this hummus.

The Best Dipping Vessel

There are lots of things you can dunk into this delectable hummus. Vegetables are one as are various crackers and chips, but my favorite is any kind of rice cracker.

I shared a picture of one above in case you have never seen a rice cracker in the store. For those of you who are gluten free, this is a good snacking option as well.

No Cilantro, No Problem

If you are one of the people who do not like cilantro, no problem at all. You can leave the cilantro out of this recipe and it will be just fine.

You can add more green onions to this if you like, or you can also add arugula instead. The peppery flavor of the arugula will be delicious.

You can also add fresh parsley if you like or just leaf out any of the leafy greens (get it?!).

Thai Peanut Hummus Recipe

Thai Peanut Hummus

Thai Peanut Hummus has all the flavors of your favorite peanut noodles but in better-for-you hummus form. Made with chickpeas, peanuts, cilantro, scallions, and a few other simple ingredients, it'll have you snacking away in no time.

Ingredients

  • 1 can of Chickpeas (16 ounces)
  • 2 cloves of Garlic
  • 2 tablespoons of Peanut Butter
  • 1 tablespoon of Sriracha
  • 1 tablespoon of Soy Sauce
  • 2 tablespoons of Olive Oil
  • 2 tablespoons of ice cold Water
  • 1/2 cup of Peanuts + 1/4 cup for topping (crushed)
  • Handful of Cilantro leaves + more for topping
  • 1/4 cup of sliced Scallions

Instructions

  1. Drain and rinse the can of chickpeas and add to a food processor or blender.
  2. Add two cloves of garlic and two tablespoons of peanut butter, one tablespoon, of soy sauce, and the tablespoon of Sriracha. Pulse a few times until slightly blended.
  3. Prepare your two tablespoons of olive oil and the two tablespoons of cold water and start to blend the chickpeas on medium speed while slowly adding the olive oil and then the water. You can add more or less water to get it to the consistency that you prefer.
  4. Add in the handful of cilantro leaves and the 1/2 cup of peanuts and pulse until it is well combined.
  5. Spread the hummus on a small plate and top with the scallions, crushed peanuts, and cilantro.
  6. Eat with your favorite veggies, crackers, or rice chips.
