Classic Corn Bread
A Dressed Up Version Of The Classic Jiffy Mix

Classic Corn Bread made with the beloved Jiffy Corn Muffin Mix. A simple and easy way to make delicious corn bread. This is mixed up with vanilla Greek yogurt which adds moisture as well as some honey for sweetness. A few other ingredients created a corn bread that will not disappoint.
My friend who blogs over at The Kitchen Wife often makes a dinner that is beans and corn bread. I was always jealous of this meal so I attempted to perfect my own corn bread recipe. I am not a baker by any means, so this took me some time. This hybrid version of “baking” makes the best cornbread. This is perfect to serve with my Mom’s Chili Recipe or Just as a side to anything Barbecue. You will love it.

In A Jiffy
I am sure everyone is familiar with Jiffy mixes. I feel like this brand has been around for over a century. If you are not familiar, pictured above is the product the recipe calls for. You can find this in mostly any baking aisle. They are usually about $.50 a box. I believe the brand is called Jiffy because the creator had a childhood memory of someone telling her that the biscuits she was making would be ready in a jiffy. But I could be wrong. Either way, this mix is a great base for the Classic Corn Bread.

It’s All Greek To Me
I decided to try to make this once with vanilla Greek yogurt to add some moisture and tanginess to the cornbread. The vanilla added a sweetness to it that I enjoyed. This worked beautifully. I know some people add buttermilk to their corn bread or sour cream, this was my replacement for those ingredients.

Don’t Forget The Butter Rub Down
You can rub the whole thing down with a pat of butter before serving. This adds a nice touch. The recipe on the recipe card has you doing this with a honey butter which takes this to the next level. One of my favorite things about corn bread is the caramelized edges and then eating the whole thing slathered in butter.

The Perfect Pair
One of my favorite things to serve with corn bread are these Oven Baked BBQ Ribs. I love the combination of the two. If I was making a complete meal, I would also make my Cucumber Salad with this recipe. To me, this is the perfect Summer meal. It is worth heating up the house to make this!

Classic Corn Bread Recipe

Classic Corn Bread that is buttery and slightly sweet. This corn bread has caramelized, buttery edges, and a soft center that is moist and delicious. Slather this in honey butter and enjoy with some chili, beans, or your favorite barbecue foods.
Ingredients
- 2 boxes of Jiffy Brand Corn Muffin Mix
- 2 large Eggs
- 1 cup of Vanilla Greek Yogurt
- 2/3 cup of Milk
- 3 tablespoons of Honey *divided
- 1/3 cup of Melted Butter + 4 tablespoons of Butter (not melted)
Instructions
- Mix all of the ingredients except for 1 tablespoon of honey and the 4 tablespoons of butter.
- Use a little of the butter to grease your pan. I prefer to use a cast iron skillet.
- Bake at 375° for 20 to 25 minutes. All oven and pans will bake differently, be sure to keep an eye on the cornbread the first time you make it. It is done when a toothpick inserted into the center comes out clean.
- While the cornbread bakes, soften the 4 tablespoons of the butter and then whip with the remaining tablespoon of honey.
- When the cornbread comes out of the oven, run some of the honey butter all over the top of the hot corn bread.
- Let the corn bread mostly cool, then serve with the whipped honey butter.
